Dad’s Wild and Crazy Marinade

My dad was the great griller in our family! It was something he enjoyed and I think , he took this role pretty seriously. He always had his hat , apron and tongs at the ready! I smile at the thought of dad coming in and saying what should we grill for dinner today? When it was to be special, it was a flank steak!  My dad would marinate  the steak for hours. We actually are not quite sure what dad had in his marinade.  I actually think he changed it every time he made it. I would try to peek , but it was his secret marinade. We would just call it John’ wild and crazy marinade. It tasted like it had a little bit of everything. I’m sure it even included a splash of scotch from the glass in his hand!  All I know is that those were the best steaks and memories I ever had. That’s the beauty of marinades, it’s the time you could let your freak flag fly a bit with creativity. I , of course ,have tried to recreate dad’s marinade over the years and this is what I’ll share with you in honor of dad and father’s day. I suggest you use this as a jumping off point and play around with your own version of this to create fond food memories for your family and friends this summer.

2 pound flank steak
1/2 cup olive oil
1/4 cup soy sauce
1/4 cup orange juice
2 tablespoons worcestershire sauce
2 garlic cloves, minced
1/2 teaspoon ground black pepper
2 tablespoons scotch
1/2 teaspoon red chili flakes
2 tablespoons dark brown sugar
Directions
Place all ingredients into a resealable plastic bag, mix well and refrigerator over night. Prepare on grill as you like.

Mediterranean Grilled Clams with Spaghetti

New York City and it’s outer boroughs are a wonderful place to grow up. This is especially true as a young child discovering New York City.  I often think of NY as a collection of neighborhoods strung together, each one unique to discover. It’s amazing how there are all these wonderful locations tucked away ,often, only discovered when someone who inhabits one of these special places, invites you to share in their special world. Rockaway Beach in Queens is such a place. It stretches on a peninsula along the Atlantic Ocean and is the largest urban beach in the United States. The streets are lined with small bungalow houses. Fun fact these bungalow’s are currently being used to film the new HBO show Boardwalk Empire – recreating the rows of bungalows that once existed behind the Atlantic City Boardwalk – another favorite location from my childhood…but that’s another blog entry. This one is about how , as a child , my family would visit one of those cute bungalow’s in Rockaway Beach. The days were filled with sun, sand and clams. We would dig for clams along the beach and then the clams would be cleaned and cooked. It seemed to me that there were endless buckets of clams to eat, the adults would sit drink and laugh and the kids would be running along the beach. It’s here that I ate my first of many clams right out of the shell. This along with memories of wet bathing suits, sand in the bottom of my two piece bathing suit along with great food, laughter and good company lead me to create my clam recipe that I share today with you.

This is also know as clams in sand as the breadcrumbs in this dish resembles sand when thrown in around the clams , however you would like to refer to this dish it’s a wonderful dish that evokes the seaside. 


Mediterranean Grilled Clams with Spaghetti

Serves 4


To make clams and bread crumb topping:

1 cup toasted bread crumbs

1 clove garlic, minced

2 tablespoons lemon juice

4 tablespoons olive oil

¼ cup sundried tomatoes, packed in oil, chopped

¼ cup Italian parsley, chopped

¼ cup fresh basil, chopped

¼ cup toasted walnuts, ground

¼ teaspoon red chili flakes

½ teaspoon fine sea salt

¼ teaspoon ground black pepper

36 littleneck clams, cleaned 


Directions 


Rinse clams with water removing all sand. Fill sink with cool water, add clams and 2 tablespoons salt Let stand for at least a ½ hour. When ready to grill, rinse with cool water again. 


In the meantime in a large bowl, combine all ingredients except clams and mix well. Remove ½ of the mixture and set aside. Heat grill, place clams on grill until they open. Discard any unopened clams. Toss together with the breadcrumb mixture to serve. 


To make spaghetti

1 lb spaghetti cooked 

¼ cup olive oil

¼ cup fresh lemon juice

2 tablespoons lemon zest

½ bread crumb mixture


Cook spaghetti according to package instructions. Remove from heat and drain. Place spaghetti into a large mixing bowl with the remaining ingredients and mix well. Place onto a platter. Add the clams and bread crumb mixture on to of the platter of spaghetti and serve. 


Note: You can serve this as a clam appetizer by eliminating the pasta and serving the clams with just the bread crumbs. Serves 6.

Pan Fried Veal with Spinach, Blueberries and Hazelnuts

Pan Fried Veal with Spinach, Blueberries and Hazelnuts

Serves 4


1 1/2 pounds veal scallopini

4 tablespoons olive oil

2 tablespoons balsamic vinegar

1/2 cup chicken broth

4 tablespoons unsalted butter

2 tablespoons  whole hazelnuts

2 tablespoons Panko bread crumbs

2 teaspoons fine sea salt

1/2 teaspoon fresh ground black pepper

1 garlic clove, chopped

1/4 teaspoon red chili flakes

2 tablespoons fresh blueberries

1 pound steamed fresh spinach


Directions

Toast hazelnuts and breadcrumbs on a baking sheet in a 400F oven for 2-3 minutes. Take toasted nuts and bread crumbs along with garlic, 1 teaspoon salt and red chili  flakes and process into coarse crumbs. Place in a bowl and add 2 tablespoons olive oil, mix and place to the side.  Flatten each scallopini between plastic wrap with a rolling pin until even. Coat veal with oil and season with salt and pepper. Heat a medium frying pan and saute veal 2 minutes per side until browned. Place on a platter and cover with foil. In the same frying pan add the stock , balsamic vinegar and bring to boil and reduce for 2 minutes. Whisk butter in pieces into the sauce. Remove from heat and add blueberries. Divide spinach  between four plates with veal on top. Spoon sauce on top of veal. Sprinkle top of veal with the hazelnut mixture and serve immediately,

Chuck Wagon Chili

Serves Eight
3 1/2 pounds beef stew meat, cubed
2 tablespoons olive oil
1 tablespoon sea salt
1/2 tablespoon fresh ground black pepper
4 medium white onions chopped
6 cloves garlic, chopped
2 tablespoons ground cumin
2 tablespoons dark brown sugar
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cloves
1 teaspoon ground cinnamon
1/2 teaspoon red pepper flakes
1 tablespoon cocoa powder
2 tablespoons tomato paste
28 ounces canned whole tomatoes with juice
2 cups coffee
2 bay leaves
Heat olive oil in a large dutch oven. Season beef cubes with salt and pepper. Brown the beef cubes in batches in the dutch oven and remove and place in bowl to the side. Add onions and garlic to the remaining oil in the dutch oven and saute under softened , about 8-10 minutes. Once the onions are softened add cumin, brown sugar, cayenne, cloves, cinnamon, red pepper flakes and cocoa powder and stir well. Cook for 1 -2 minutes until fragrant. Put the browned meat back into the pot and then add the tomato paste, tomatoes , coffee and bay leaves stir again and bring to boil. Reduce to simmer , covered for 2 hours, until meat is fork tender. Serve warm in big bowls.

Coffee Marinated Skirt Steak

Coffee Marinated Skirt Steak

Serves 4-6

Ingredients

  • 2 ½ lbs skirt steak
  • 2 cups cold coffee
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons dark brown sugar
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground black pepper

Directions

Combine all ingredients into a sealed plastic bag. Marinate overnight. Preheat charcoal grill or stovetop grill pan. Season the steak with salt and pepper. Grill the steak for 2 to 3 minutes per side or until cooked to desired degree of doneness. Transfer the steak to a cutting surface and allow to stand for 5 to 8 minutes. Cut steak across the grain into thin 1/2-inch slices.

Great Balls of Fire- Memphis Style Dry-Rub and Bourbon Barbecue Sauce

Besides loving to cook , I’m a big fan of rock and roll. One day while strolling the bargain aisle of Barnes and Noble, I found the perfect book ” Are You Hungry Tonight? Elvis’ Favorite Recipes” complied by Brenda Arlene Butler. I couldn’t believe my luck finding a cook book that combines two passions of mine. This book sits proudly in my cookbook library. The book is filled with southern home cooking recipes, including barbecue. Memphis ,the home of rockabilly, is also the home of great barbecue. Memphis style barbecue uses combinations of both dry rubs and sauces. I’ve worked on creating one of each. During the summer, there are lots of occasions for grilling. I  like to keep some dry rub prepared and stored in a jar ready to use at a moment’s notice. If it’s a big holiday weekend, I just make some of the barbecue sauce and keep it in a jar in the fridge ready to season meats or use a a base to make baked beans with a kick or  as sauce to make a pizza. Both are really simple to make and worth the extra effort for some really great barbecue.  Try these recipes and then kick back, with music recorded at Sun Studio with a rib and napkin in hand!

Great Balls of Fire- Memphis Style  Dry-Rub

2 tablespoons smoky paprika

1 tablespoon Old Bay Seasoning

1 tablespoon dark brown sugar

1 teaspoon ground black pepper

1 ½  teaspoons fine sea salt

1 teaspoon dry mustard

1 teaspoon cumin

½ teaspoon cayenne pepper

( at the time of use 1 tablespoon white vinegar)

 

To make the rub combine all dry ingredients well and store in a covered jar. When ready to use add a little white vinegar, if using all the rub add 1 tablespoon of vinegar.

To make ribs: 

Use 4 pounds of slab baby back ribs. To prepare the ribs, remove the thin papery skin from the back of each rack of ribs. Wash and pat dry. In a bowl mix all the rub ingredients together .  Rub ½ of the mixture all over the ribs on both sides and place in a shallow roasting pan. Keep the remaining rub for later. 

Place ribs in a 450 oven for 30 minutes. Continue baking in a 350 oven for about 2 more hours. Half way through take the drippings and mix with remaining rub and baste the ribs with the mixture.  When done transfer the ribs to a cutting board and cut into pieces. Serve with your favorite  barbecue sauce. 

 
Rockin Blue Bourbon Barbecue Sauce
Makes 2 cups
 

1 1/2 cups Jack Daniel’s Black Label or Bourbon

1 cup ketchup

1 tablespoon lemon juice

2 tablespoons Worcestershire sauce

2 tablespoons balsamic vinegar

4 tablespoons dark molasses

1/2 teaspoon hot sauce


 Pour 1 cup of whiskey into a saucepan. Bring the saucepan to a boil and reduce the liquid to about 2 tablespoons. Don’t let the alcohol flame. 

 Add 1/2 cup of the whiskey and the other ingredients. Simmer over a low heat for 30 minutes and reduce it by about 1/3. Use it immediately or bottle it and keep it in the refrigerator for a month or more.

Grandma’s Beef Goulash

As we move further into fall, the winds pick up over the water by the bay. It becomes time for meals that are slowly cooked at the stove and shared with family. One of my childhood favorites is my grandmother’s goulash. She was born in Austria and a wonderful cook. I grew up watching her cook for hours.  Unfortunately, I never took notes and she had just a few things written down, mostly for baking and just ingredients. I had bits and pieces of recipes from my memories and those of my family. I tried often to recreate grandma’s goulash recipe and it always fell slightly short. It wasn’t until my mom remembered that grandma added a large piece of lemon zest right before serving and oh I think she added a little cognac to the stock in the beginning of the recipe that I finally hit the mark.  I admit, I have tweaked the recipe a little more, but only for the better. I don’t think grandma would mind at all. With the bar held so high, when I pleased the family, I knew I finally had it right! So it’s with great pleasure that I share this dish. Guten Appetit!

Beef Goulash

Serves 4-6

4 tablespoon olive oil

2 ½ lbs cubed beef stew meat

¼ cup flour

1 tablespoon sweet paprika

4 cups onions finely chopped

1 tablespoon sugar

½ teaspoon caraway seeds, toasted

1 tablespoon minced fresh rosemary

1 teaspoon minced fresh thyme

1 bay leaf

2 tablespoons tomato paste

1 tablespoon balsamic vinegar

4 cups chicken stock

1 tablespoon cognac

1 teaspoon sea salt

¼ teaspoon ground pepper

Zest of 1 lemon

Directions

Mix flour, salt, pepper and paprika in a sealed plastic bag. Add beef cubes into bag and coated with flour mixture. In a large Dutch oven heat 2 tablespoons olive oil. Sauté floured beef cubes until browned. Remove browned meat into bowl and place aside. Add remaining olive oil to pan and sauté the onions with the sugar until onions start to caramelized. Add the caraway seed, rosemary, thyme, and bay leaf. Sauté until fragrant about one minute. Add the tomatoe paste. Deglaze with the vinegar and stock , then add the meat. Bring to a boil, then lower heat , cover and simmer until very tender, approximately 2 hours. Add one tablespoon cognac and simmer another ten minutes. Remove from heat add lemon zest and serve with noodles, rice or dumplings!

Napa Memories – Celebrating the Grape Harvest with Food

It’s end of September and time for the grape harvest and crush. It’s time to celebrate the harvest especially for wine lovers. But there is way to engage those who don’t have a passion for wine and still celebrate the harvest, simply cook with grapes.  I find that outside a fruit salad it’s not often you find grapes in your food. When I was a buyer at Saks Fifth Avenue , I had the good fortune to work in Florence several times a year.  No matter what time of the year I went, I was always looking forward to some seasonal food that would be available. It’s how I would bench mark my trips. Each morning I would walk from the hotel to the buying office. Along the way,  I would pass many pasticceria shops and in the fall they would all have grape schiacciata. Many days when I arrived to the office, I would be asking about how to prepare something from dinner the previous evening or did they have a recipe for something I had just seen in the pasticceria shop. My first recipe is a verison of the grape schiacciata shared with me from one of those trips. Another recipe  is a twist on a another classic dish from Tuscany called salisicca all’ uva – sausage and grapes. Instead of pan frying , I am roasting them in the oven along with onion, rosemary, thyme and balsamic vinegar. Terrific for dinner with mashed potatoes or for breakfast along with some great country bread. Give these recipes a try and celebrate!

Serves 8

 

Dough

3 ½ cups unbleached all purpose flour

1 package instant yeast

1 tablespoon fine sea salt

1 tablespoon fine sugar, plus extra for topping

1 ¼ cup warm water (110F)

2 tablespoons olive oil,

Cooking oil spray for bowl and baking sheet

Topping

1 cup red grapes, halfed

1 tablespoon lemon zest

2 tablespoon olive oil

Directions

Mix the flour, yeast and 1 tablespoon salt in a food processor. With motor running add warm water to make a soft dough that forms a ball. If the dough is a little too sticky add a little more flour, too dry add a little water. Process another minute until smooth. Place in an oiled bowl and shape into a ball. Cover with a damp towel leave to rise at room temperature for an hour. The dough should be double in size. Punch the dough down. Take a non stick rimmed cooking sheet 9” x 13”. Spray sheet lightly with cooking oil and spread dough out to the size of the pan. Cover with damp dishtowel and let rise again for 30 minutes. Preheat over to 425 degrees F. Make bread topping by combining all ingredients. Take a brush and spread the oil from fruit mixture all over the top them add the fruit, pressing into the dough. Finally, sprinkle additional sugar on the top of the dough. Bake for 15-20 minutes until golden brown. Remove from oven and place on a board to serve either hot or at room temperature.

Roasted Sausages and Grapes  with Herbs Serves 4 1 1/2 pounds sweet sausage 3 cups seedless red seedless grapes 1 bay leave 2 sprigs rosemary 2 sprigs thyme 1 clove garlic, peeled and chopped 2 tablespoons olive oil 2 tablespoons balsamic vinegar seas salt and freshly ground pepper Directions Preheat oven to 400 degrees F. In a baking dish add the sausage , grapes and garlic in a a baking dish in a single layer. Add the rosemary, thyme and bay leave , then drizzle the olive oil and balsamic vinegar on top. Season with salt and pepper. Toss all together and then place in the oven for 30 minutes. Remove baking dish  and turn sausages and place back in the oven for another 15 minutes, until the sausages are browned and cooked and grapes and onions so soft. Remove from oven and serve  with bread or mashed potatoes.

Cooking with Red Hot Chili Peppers

The other day I ran into a friend Eva who offered me some hot chili peppers from her garden. She and her husband Al had a large harvest of hot peppers, too many for them to use. I , of course, jumped at the chance to spend a weekend cooking and experimenting with an ingredient. When the peppers arrived, I was thrilled to have a big bowl of color in my kitchen: all that red, green, orange and yellow. The first thing I quickly tried was a red chili mayonnaise that I planned to use with grilled shrimp as a main course or appetizer. I also thought that the red chili mayonnaise would be terrific to make panini’s  -a fun twist on a ham and cheese. My next recipe I decided to adapt my grandmother’s beef goulash recipe and make a pork goulash, using cubes of pork with peppers  and onions for a fiery dish. This meal started with a crostini of toasted bread and fresh ricotta cheese, topped with fresh chopped red chilis, drizzled with olive oil and sprinkled with some coarse sea salt. I wish I had  a bowl of chili peppers in my kitchen every weekend and you will too when you try some of these recipes.

Word of caution when cooking with chili peppers: I suggest using disposable latex gloves especially if you have sensitive skin, like I do. I also wear contacts and trust me you don’t want to place you fingers anywhere near your eyes after handling fiery peppers! The heat of the chili comes from the seeds and the membrane inside the pepper, so to control the amount of heat in your dish, I suggest removing all seeds and membranes.

Red Chili Mayonnaise
1 cup store bought mayonnaise
3 small red chilies, seeded and chopped
2 tablespoons fresh lemon juice
1 teaspoon worcestershire sauce
Place all the ingredients in a food processor and blend well.

Chili Ham and Cheese Panini
Serves 1
2 slices sourdough bread
1 tablespoon butter
1 tablespoon red chili mayonnaise
3 slices virginia ham
2 slices gruyere cheese
2 slices dill pickle toppers
Heat panini press or skillet. Butter two slices of bread. Buttered sides are the outside of the sandwich. On one side of bread – not buttered spread the chili mayonnaise, add the ham , then cheese and pickles. Top with the other slice of bread , press down and then toast until cheese is melted and bread browned. Serve immediately.

Chili Pepper and Pork Goulash

Serves 4-6

 

3 pounds cubed pork stew meat

4 tablespoon olive oil

2 tablespoons flour

1 tablespoon sweet paprika

1 teaspoon fine sea salt

1/2 teaspoon fresh ground black pepper

4 cups onions finely chopped

6 medium size assorted chili peppers without seeds and membranes, chopped

2 tablespoons tomato paste

1 teaspoon caraway seeds, toasted

1 tablespoon minced fresh rosemary

1 teaspoon minced fresh thyme

1 bay leaf

1 tablespoon red wine vinegar

4 cups chicken stock

1 jar 12 ounces of roasted red and yellow sweet peppers

Zest of 1 lemon

 

Directions

 

Mix flour, salt, pepper and paprika in a sealed plastic bag. Add pork cubes into bag and coated with flour mixture. In a large Dutch oven heat olive oil. Sauté floured pork cubes until browned. Remove browned meat into bowl and place aside. Add remaining olive oil to pan and sauté the onions with chili peppers until softened. Add the caraway seed, rosemary, thyme, and bay leaf. Sauté until fragrant about one minute. Add the tomatoe paste. Deglaze with the vinegar and stock , then add the meat and roasted peppers. Bring to a boil, then lower heat , cover and simmer until very tender, approximately 2  to 2 1/2 hours. Remove from heat add lemon zest and serve with noodles or rice. 

Barbecue Chicken Breasts with Fresh Peach and Jalapeno Sauce

Barbecue Chicken Breasts with Fresh Peach and Jalapeno Sauce
Serves 6
6 Chicken Breasts, bone in and skin
1/4 cup olive oil
juice of 2 limes
2 garlic cloves, peeled and crushed
1 tablespoon coarse sea salt
 1 recipe of Fresh Peach and Jalapeno Barbecue Sauce
Directions
Place all ingredients except barbecue sauce into a resealable plastic bag and marinate the chicken for several hours  before cooking. Preheat oven to 325F and empty contents of plastic bag into baking dish with chicken breast skin side up. Bake for 1 hour. Heat grill and using approximately 3/4 of the barbecue sauce brush generously the skin side of the breasts and place skin side down onto the grill. Brush the back of the breasts, now with sauce. Cook until skin begins to char on each side. Remove and serve warm with remaining barbecue sauce on the side, reheated and warm.

Fresh Peach and Jalapeno Barbecue Sauce
2 1/2 cups fresh peaches, stoned and chopped
1/2 cup ketchup
1/4 cup peach preserves
1 tablespoon garlic, chopped
3 tablespoons olive oil
2 tablespoons light soy sauce
1 tablespoon dijon mustard
1 tablespoon jalapeno chopped
1 tablespoon lime juice
1/2 teaspoon hot sauce
1 teaspoon salt
1/2 teaspoon ground black pepper
Directions
Place on ingredients into a medium sauce pan and place onto a medium heat. Stir ingredients and bring to a boil. Reduce heat and simmer for 30 minutes. Cool and blend in a food processor. Place in a jar until ready to use . Barbecue sauce will last 3 days
