Pumpkin Spice Applesauce

 

What’s the perfect fall combination, well apples and pumpkin spice! Now before you dismiss this idea because you see everything with pumpkin spice this time of year , let me make my case for this delicious recipe. Nothing beats home made apple sauce, especially this time of year when we have so many apples available. I always flavor my apple sauce with cinnamon, using my homemade pumpkin spice , it’s amped up flavor, with nutmeg, cloves, ginger and allspice. The resulting taste is so good, you will only want pumpkin spice applesauce from now on ! Honest!!!

Pumpkin Spice Applesauce

Ingredients

  • 6 large red apples – peeled, cored and sliced, approximately 2 lbs. ( like Macoun or Macintosh)
  • 1/2 cup water
  • 1/2 cup white granulated sugar
  • 2 teaspoons pumpkin spice mix ( recipe below)

Directions

Place all the ingredients into a medium saucepan and bring to a boil. Reduce heat and simmer for 25 to 30 minutes, stirring occasionally until apples are soft. Remove from heat and cool. Mash the apples together with a potato masher. Place in an air tight container and refrigerate until ready to use. It will keep in a refrigerator for about 1 week.

Pumpkin Spice Mix

Ingredients

  • 2 teaspoons ground cinnamon
  • 3/4 teaspoon fresh ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice

Directions

Mix all spices together well and store in a closed air tight container.

Countdown to Thanksgiving – Maple Bourbon Roasted Turkey

Thanksgiving is coming and to kick off this year’s recipes we start with the main event – maple glazed turkey that has been spent the night in a brine that includes both maple and bourbon. It’s an unforgettable turkey – moist and delicious , as well as beautiful. I’ll be posting recipes from now until Thanksgiving. Each recipe will build the menu for this year’s feast. Maple Bourbon Roasted Turkey

1 16-18 lb. turkey, preferably organic

Brine

16 cups cold water, or more to cover turkey

3 cups bourbon

1 cup fine sea salt

1 cup light brown sugar

2 macintosh apples , quartered

3 garlic cloves

4 bay leaves

2 tablespoon black peppercorns

2 cups maple syrup

2 oranges quartered

3 sprigs rosemary

To roast turkey

2 whole macintosh apples

1 orange , quartered

1 bunch fresh rosemary leaves

2 tablespoons fine grey sea salt

1 tablespoon ground black pepper

To baste

8 tablespoon unsalted butter at room temperature

¼ cup maple syrup

Directions

Prepare brine by combining bourbon, water, sea salt, maple syrup, brown sugar, oranges, rosemary, apples, bay leaves and peppercorns. Stir to dissolve the salt and sugar. Clean turkey with cold water removing any giblets and or neck. Keep giblets and neck in the refrigerator to use later for gravy base.  Place turkey and brine into a resealable plastic bag or into a large non reactive bowl covered with plastic wrap. The turkey should be covered with the brine, if not add more water. Refrigerate over night.  The next day remove turkey 40 minutes before planning to place into the oven. Preheat oven to 425 degrees F. Remove turkey from brine and pat dry with paper towels inside and out.  Season the turkey cavity with salt and pepper.  Fill the cavity  with the apples, orange and rosemary.  Tie turkey legs together and place into roasting pan. In a small sauce pan melt butter and maple syrup together on a low heat. Use this to baste turkey once before placing into the oven. Roast the turkey at 425 degrees F for 30 minutes then lower the oven to 350 degrees F.   For an 18 lb. turkey cooking time will be approximately 3 hours. Use a meat thermometer to check that the meat registers 175 degrees F at its thickest part of the thigh. Baste the turkey about every 30 minutes with the butter and maple syrup mixture. If the turkey browns too quickly tent that part with aluminum foil. When ready, remove from the oven. Take turkey from the roasting pan and place on a cutting board to rest before carving, at least 20 minutes. If you are serving later then 20 minutes from removing from oven tent turkey with aluminum foil until ready to serve.


Mom’s Apple Cake, also know as Jewish Apple Cake

For as long as I can remember, my Mom made this apple cake. At this stage of my life, this means it’s a very long time, let’s just say Mom is over 90 and we can leave it at that!  When Mom referred to this cake she called it Mom’s cake -meaning my dad’s mom or my mom called it the Jewish Apple Cake. Now for starters we are not Jewish. We also called several cake’s mom’s cake since my grandmother was an amazing baker – thus the need to further identify the cake such as Jewish Apple. I did a little on line search about Jewish Apple Cake. It seems it’s called Jewish Apple because it does not use dairy such as milk or butter. There are many versions of this recipe with slight variations but basically the same recipe. I also read that this recipe was published long ago in some women’s magazine. No matter the source,  the real testament to this recipe is that it’s so good, it had stood the test of time . A recipe passed by word of mouth from generation to generation and from friend to friend. The bottom line about this cake how good it tastes, that it is super easy to make and it’s a true celebration of fall! It’s a cake that satisfies the apple lover in each of us. You will get such joy from the wafting aroma of baking apples, sugar and cinnamon and then the joy of eating this yummy cake.

Mom’s Apple Cake a.k.a. “Jewish” Apple Cake

Ingredients

For Apple Filling

  • 5 medium apples , preferably those good for baking such as macintosh
  • 5 tablespoons granulated sugar
  • 1 tablespoon ground cinnamon

For Cake Batter

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 3 teaspoons baking powder
  • 1 cup vegetable oil
  • 4 eggs
  • 1/4 cup orange juice
  • 2 1/2 teaspoons vanilla extract

Directions

Preheat oven to 350 degrees F. Use nonstick cooking spray to grease tall tube pan, then lightly dust with flour.  Peel and core the apples, then cut into 1 inch cubes. Place in a bowl and sprinkle with the 5 tablespoons of sugar and cinnamon. Toss to coat the apples evenly. Set aside. In another bowl sift together the flour and baking powder. In a separate bowl add the oil, juice, sugar, vanilla and eggs. Mix well. Add the wet ingredients into the dry and mix well. the batter will be thick. Pour half the batter into the tube pan, make sure the batter is spread evenly. Top with half the apples. Pour the remaining batter into the tube, again ensuring the batter is spread. Arrange remaining apples over the top.  Bake for 1 1/2 hours or until a tester comes out clean. Let cool completely ( at least 25 minutes). Run a clean knife between the cake and pan to loosen the cake before turning onto a plate.

Apple Crostata with Fig Glaze

Wondering what do do with those apples you just picked or bought at the farm stand ? This is a delicious and easy to make apple crostata with an easy glaze made from store bought jam. I picked fig jam for my glaze but apricot work work just as well. I love making this recipe the crust is simple and the rustic shape of the pie is part of the charm. You can use a box grater of a mandoline to slice the apples, but if you don’t have either just slice the apples as thin as you can with a knife. This is quick to assemble , bake , eat and enjoy!

Apple Crostata with Fig Glaze


1 cup all purpose flour
2 tablespoons sugar plus 3 tablespoons sugar
1 stick butter diced and chilled
3 tablespoons ice water (approx.) mixed with 1 teaspoon white vinegar
1 large apple, like honey crisp
1 tablespoon lemon juice
2 tablespoons fig jam
2 teaspoons water


Directions:
To make pastry place into a food processor the flour and 2 tablespoons sugar. Pulse to blend. Add the chilled butter and pulse until the texture is grainy . With the motor running add the water and vinegar mixture slowly, stop just when the dough comes together.  Remove dough onto parchment paper, flatten into a disk and cover. Place in the refrigerator for at least one hour. While the dough is chilling cut apple in half apples from the stem down. Using a mandoline slicer and slice apples thinly. Please apples in a bow ,adding the lemon juice and 2 tablespoons sugar. Mix well. Preheat oven to 450 degrees F. Once the dough is chilled, remove  from the refrigerator and  keep dough on parchment paper and lightly flour top of the dough. Quickly roll out into a circle approximately 10 inch diameter. Transfer parchment paper with dough onto a baking sheet. Leave a 1/2 inch border of dough from the outer perimeter and arrange apples in a circle working from the outside in a concentric circle continue  towards the center until filled in.  In a small sauce pan heat jam and 2 teaspoons water and heat until combined. Remove from heat and brush the apples with the glaze. Place in the over and bake foe approximately 20-25 minutes. Allow to cool. Serve warm or at room temperature.

Apple Cider Braised Pan Seared Bratwurst and Apples with Red Cabbage Slaw

To welcome Fall and celebrate my German heritage, I made this platter of cider braised bratwurst and then pan seared both the brats and some crisp apples all served on a red cabbage slaw, It was the perfect autumn dish a study in contrasts : slightly sweet and salty, softened apples mixing with the crispy slaw. It’s my modern take on the more classic brats with sauerkraut.

Apple Cider Braised Pan Seared Bratwurst and Apples with Red Cabbage Slaw

Serves 8

Ingredients

4 cups apple cider

8 bratwurst

4 apples , skin on cut in half

1 tablespoon canola oil

1/4 cup white wine

2 tablespoons white vinegar

1 recipe red cabbage slaw ( recipe follows)

Directions

In medium sauce pan add bratwurst and cider, bring to a simmer and cover for 15 minutes remove from heat. Remove bratwurst remove brats from pan and set aside. Heat oil in a large cast-iron or other heavy skillet over medium-high heat. Add apples, cut side down, and cook, turning occasionally, until golden brown, 5–8 minutes. Prick brats with a fork, add to skillet with apples, and cook, turning occasionally, until browned, 5 to 8 minutes. Add wine and vinegar to skillet. Bring to a boil, reduce heat, and simmer until thickened (liquid should coat a spoon), about 4 minutes.

To serve place red slaw on a platter , add apples and brats and enjoy!

Red Cabbage Slaw

Ingredients

For the Slaw
1 small head of red cabbage, cored and shredded
1 small red onion, sliced thinly
1/2 teaspoon caraway seed (optional)
Sea salt, to taste
Cracked black pepper, to taste

For The Dressing:
1/4 cup of apple cider vinegar
1 tablespoon of pure maple syrup
2 teaspoons Dijon mustard
1 pinch of cayenne pepper (optional)
Sea salt, to taste
Cracked black pepper, to taste
1/4 cup canola oil

Directions

In a large mixing bowl add cabbage, onions, caraway seed, salt and pepper.  In a large covered jar add ingredients for dressing and shack vigorously. Pour dressing over cabbage and mix well. Set aside.

 

 

 

 

Apple Bourbon Cranberry Sauce

Making cranberry sauce couldn’t be easier….this version combines some of my favorite flavors- of course cranberries, sweeten with juicy apples , apple cider and finished off with a little bourbon! You’ll love this recipe and it’s great to use through out the holiday season!!

Apple Bourbon Cranberry Sauce

Ingredients

½ cup apple cider

1 cup fine sugar

1 12oz, package whole fresh cranberries

3/4 cup apples, peeled, seeded and chopped

¼ cup bourbon

¼ teaspoon ground cinnamon

Directions

Combine apple cider, bourbon and sugar in a medium sauce pan. Bring to a boil, stirring to dissolve sugar. Add cranberries, apples and cinnamon. Return to a boil, reduce heat and simmer approximately 10 minutes until the cranberries start to burst. Remove from heat. Cool completely and then chill in refrigerator. Cranberry sauce will thicken. Serve chilled.

3 lemons , quartered
3 sprigs fresh thyme
6 springs fresh rosemary
2 tablespoons black peppercorns
1 bouquet garni
1 cup honey
2 onions , peeled and quartered
3 sprigs sage leaves
To roast turkey
1 lemon, quartered
1 bunch fresh sage leaves
1 bunch fresh rosemary
2 tablespoons fine grey sea salt
1 tablespoon ground black pepper
To baste
8 tablespoon unsalted butter at room temperature
¼ cup honey
Directions
Prepare brine by combining water, sea salt, honey, sugar, onions, rosemary, thyme, bouquet garni and peppercorns. Cut 2 lemons into wedges, squeezing juice of lemons into the brine along with the wedges and stir to dissolve the salt and sugar. Clean turkey with cold water removing any giblets and or neck. Keep giblets and neck in the refrigerator to use later for gravy base. Place turkey and brine into a resealable plastic bag or into a large non reactive bowl covered with plastic wrap. The turkey should be covered with the brine, if not add more water. Refrigerate over night. The next day remove turkey 40 minutes before planning to place into the oven. Preheat oven to 425 degress F. Remove turkey from brine and pat dry with paper towels inside and out. Season the turkey cavity with salt and pepper. Squeeze lemon juice into the cavity and add the quarters along with rosemary and sage. Tie turkey legs together and place into roasting pan. Roast the turkey at 425 degrees F for 30 minutes then lower the oven to 350 degrees F. For an 18 lb. turkey cooking time will be approximately 3 hours. Apple Sage Roasted Turkey

It’s time to start planning the Thanksgiving menu and of course the turkey is the centerpiece. I like to experiment each year with flavors and this is a perfect combination of autumnal tastes with apple and sage. I like to brine the turkey overnight , resulting in a juicy roast turkey. I like to paste my turkeys with butter and something sweet, in this case honey which makes the turkey skin crispy and lacquered in appearance. Let the Thanksgiving planning begin with this delicious turkey as your star!

Pumpkin Cider Bread

Here is another great treat made not only with pumpkin but also apple cider for the perfect autumn food pairing. This easy pumpkin bread taste perfect just as it is moist and spicy or kick the taste up another notch by slathering some cider cream cheese frosting on top. It’s wickedly good!

Pumpkin Cider Bread 

Makes 1 Loaf or 4 mini loaves

Adapted from Gourmet October 1991

Ingredients

  • 1 cup apple cider
  • 1 cup canned pumpkin purée
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 3/4 cup firmly packed light brown sugar
  • 2 cups all-purpose flour
  • 2 teaspoons double-acting baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup raisins

Directions

In a saucepan boil the cider until it is reduced to about 1/4 cup, add raisins and let it cool. In a bowl whisk together well the pumpkin purée, the eggs, the oil, the brown sugar, and the reduced cider. Into the bowl sift together the flour, baking powder, salt, baking soda, cinnamon, ginger, allspice, nutmeg and cloves and stir the batter until it is just combined. Transfer the batter to a well-buttered 8 1/2-by 4 1/2-inch loaf pan and bake the bread in the middle of a preheated 350°F. oven for 1 hour, or until a tester comes out clean. Let the bread cool in the pan.

Cider Cream Cheese Icing

For the icing
1/2 cup apple cider
6 ounces cream cheese, cut into bits and softened
1/2 cup sifted confectioners’ sugar

Make the icing:
In a saucepan boil the cider until it is reduced to about 1/4 cup and let it cool. In a bowl with an electric mixer beat together the cream cheese, the confectioners’ sugar, the reduced cider, and a pinch of salt until the icing is smooth.

 Summer evenings are meant for enjoying barbecue foods and nothing is more satisifying than lip smacking and finger licking ribs. This recipe highlights a barbecue sauce that is tomato based with added sweetness from fresh apple and a hint of bourbon.  A touch of molasses creates that lovely sweet bark finish. The best part  of this rib recipe is that they are made in the oven with minimal work but fantastic results. The meat from these ribs just pull off the bone. Summer is officially here this weekend, this is the perfect dish to celebrate!

Spare Ribs with Bourbon Apple Barbecue Sauce
Serves 4 as main course or 8 as appetizer

Ingredients

  • 2 1/2 lbs. racks baby back ribs
  • 1 cup ketchup
  • 1 apple, peeled, cored and chopped
  • 1/2 cup bourbon
  • 3 tablespoons molasses
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon minced garlic
  • 1/4 teaspoon red chili flakes
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon fresh ground black pepper

Directions
Preheat oven to 425 degrees F. In a small sauce pan add all ingredients except for ribs. Bring to a boil. Reduce heat and simmer for 20 minutes, then turn off heat and cool. Puree in a food processor and set aside covered. In a large roasting pan lined with aluminum foil place the ribs in a single layer. Place in oven to brown for 30 minutes. After the 30 minutes remove ribs from pan and pour off any juice and fat. Place the ribs back into the pan. Use half the barbecue sauce and pour over and spread over the ribs. Lower the oven to 400 degrees F and place the ribs back in the oven, turning the ribs over and covering them with the remaining sauce. Bake for another 30 minutes and remove from the oven. The ribs can be served immediately or at room temperature.
