Peach Basil Hand Pies
Makes 6 pies

Ingredients
1 recipe flaky pie dough ( see recipe below)
2 cups fresh chopped peaches, stoned and skinned
2 teaspoons sweet basil, chopped
3 tablespoons fine granulated sugar
2 tablespoons cornstarch
1/8 teaspoon fresh ground black pepper
1/8 teaspoon fine sea salt
1/8 teaspoon ground cinnamon
1/2 teaspoon rice wine vinegar
1 egg, slightly beaten
Directions
Preheat oven to 375 degrees F. Line 2 baking sheets with parchment paper. To make the filling add into a medium bowl the peaches, basil, 2 tablespoons sugar, cornstarch, pepper, salt, cinnamon and rice wine vinegar. Mix well and set aside. Dust your work surface with flour and roll out your pie crust into a 20 inch square. Cut the dough into eight 5 inch squares. Working with each square individually, place 2 tablespoons of filling in the center. Brush the two connecting edges with egg and fold in half making a triangle.  Press the ends together to seal. Place onto the parchment line tray. Use knife to trim uneven edges. Repeat with remaining squares. Brush the top of each pie with remaining egg wash and sprinkle the remaining sugar on top. Make a small slit on the top of each pie fro steam to escape. Place in the oven and bake for approximately 25 minutes until filling is bubbling and crust is pies golden brown. Remove from oven.  Cool and serve.

Serves 4

Ingredients
1/3 cup plus 1/2 cup extra-virgin olive oil, divided
1 pound small Italian eggplants, cut into 1-inch cubes
Kosher salt and freshly ground black pepper
1 pound zucchini, cut crosswise into 1-inch sections
3 anchovy fillets, finely minced or 2 teaspoons anchovy paste
2 onions, finely chopped
3 garlic cloves, finely chopped
1/4 cup chopped fresh flat-leaf parsley
Leaves from 1/2 bunch fresh basil, coarsely chopped
Leaves from 4 fresh thyme sprigs
2 pints cherry tomatoes or 3 medium size Heirloom tomatoes, chopped
1 dried chile or 1 teaspoon dried red chili flakes
Splash balsamic vinegar

Directions
Line a large platter with paper towels. Heat 1/3 cup olive oil in a medium saucepan over medium heat. Add the eggplant, season generously with salt and pepper, and let that cook down for 10 to 12 minutes, until the eggplant is soft and wilted. Remove the eggplant from the pan and onto a platter to drain. Next stop, zucchini: cook it the same way in 1/4 cup oil, then add it to the platter with the eggplant.

Add another 1/4 cup olive oil to the pan, then the anchovies or paste, onions, garlic and herbs. Cook for 5 to 7 minutes, until the onions get nice and caramelized. Add the tomatoes and cook that down for 10 to 12 minutes, until pulpy. Return the eggplant and zucchini to the pan, crack open the chile, and add that too or season with red chili flakes. Season with salt and pepper and let the ratatouille cook slowly for about 20 minutes, until the mixture is soft, mushy and juicy; you want all the flavors to come together. Stir in the vinegar and let cool to room temperature.

 This is a very special time of year, when all the farm produce is bursting with flavor at the farm stands and local markets. My very favorite is corn. Growing up most of my summer corn eating was from the cob. Nothing wrong with that , it’s delicious . I thought I would a pick a few of the recipes I developed with either left over corn on the cob or using corn a little differently. There are so many great recipes for corn here are just a few. Corn Soup with Basil Oil

Serves 4

6 medium size ears fresh corn

4 cups chicken broth

4 cups vegetable broth

½ cup white wine

½ cup half and half

1 tablespoon lemon juice

½ cup fresh basil

Directions

In a large pot add both chicken and vegetable broth, along with white wine and corn. Cover pot and bring broth to a boil for 5 minutes. Remove corn from broth and let cool.
