Watermelon Cucumber Salsa

It’s not even summer yet and we are about to have our second heat wave starting Sunday! During the last mini heat wave I wanted to serve a  side dish that was cool and refreshing. It turns out that watermelon and cucumbers are a perfect pair.  I served this salsa along with grilled fish tacos, but this side is so versatile it complements most fish, pork and chicken.  Oh, and let’s not forget a perfect salsa for dipping a tortilla chip. It’s a must try recipe!

Watermelon Cucumber Salsa

Serves 4

Ingredients

  • 2 cups finely diced seedless watermelon
  • 1 cup finely diced english cucumber
  • 3 tablespoons minced red onion
  • 1 tablespoon minced and seeded jalapeno pepper
  • 1 tablespoon honey
  • 2 tablespoons lime juice
  • zest of one lime
  • 1/4 teaspoon fine sea salt, or to taste
  • 1/4 teaspoon fresh ground  black pepper
  • 2 tablespoons finely chopped mint

Directions

In a medium size bowl combine the honey, lime juice salt and pepper. Mix well.  Add the remaining ingredients and toss gently. Cover and refrigerate until ready to serve, up to 1 day.

 

 

 

 

Fresh Corn and Tomato Cilantro Salsa

It’s one of my favorite times of year! Farm stands are filled with the freshest local product , picked in the morning and by late afternoon, I have prepared something for dinner. What I most look forward to is the local corn and tomatoes. This is a quick and easy salsa I made marrying my two favorite summer vegetables into a great salsa, dressed with cilantro and lime. This recipe uses fresh raw corn, fresh and sweet, cut from the cob. The recipe works best when the corn is fresh. I like to use heirloom tomatoes if I can find them and then I make a simple dressing which is much like a pesto using cilantro, although basil would work as well. You can serve this with chips along with you evening cocktail or it makes a perfect side dish. Enjoy!

Fresh Corn and Tomato Cilantro Salsa

Serves Six

Ingredients

6 ears of corn

1/2 red onion, finely chopped

2 tomatoes, seeded and chopped

2 cloves garlic minced

1 cup cilantro

1/2 cup olive oil

juice and zest of two limes

1 teaspoon honey

1/2 jalapeno, seeded and chopped

2 teaspoons fine sea salt

1/2 teaspoon fresh ground black pepper

Directions

Remove silk and husks from corn. Cut corn off cob and place in a medium bowl. Add red onion, tomato and lime zest. In a blender or food processor add garlic, cilantro, honey, jalapeno, olive oil, lime juice , salt and pepper. Blend until smooth. Pour over corn and tomatoes and mix well. Adjust salt and pepper to taste and serve at room temperature.

Rhubarb Mojito

I love rhubarb and I love mojito’s so what better cocktail than this winning combination of two favorite tastes! A delicious simple syrup made with rhubarb not only infuses the  cocktail with the taste of rhubarb but it creates a beautiful pink hue to the beverage!  You’ll love kicking off your summer with this beverage in hand!

Rhubarb Simple Syrup

Ingredients

4 cups fresh chopped rhubarb

lime rind

1 cup granulated sugar

1 cup water

Directions

In a medium saucepan combine sugar, water, rhubarb and rind. Bring to a boil, stirring, until sugar has dissolved and rhubarb has softened. Using a fine mesh sieve to strain. Allow to cool. Store in a glass jar in the refrigerator until ready to use. Will keep for one week.

Rhubarb Mojito

Ingredients

3 ounces rhubarb syrup

1 ounce lime juice

1 lime wedge

2 ounces white rum

5 mint leaves

1sprig mint

ice

sparkling water

Directions

Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add rhubarb simple syrup and lime juice, and muddle. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir. Garnish with the remaining mint. Enjoy!
