Dad’s Favorite Blue Cheese Dressing

I wanted to remember my Dad this Father’s Day by blogging about one of his recipes. Dad did not cook a lot but he had a few special dishes. I turned to my sister Nancy the other day and said, “What should Dad’s Blog be about? ” We both turned to each other and said simultaneously, Blue Cheese Dressing! My Dad was in banking, think Don Draper giving out loans instead of managing an ad agency and that would be Dad. Lunches and dinners with clients, often at the top steakhouses in the city. When Dad liked something he dined on , he often would come home and explain it to my mother. Mom is amazing, she had a very high success rate recreating dishes for my Dad. There were rare occasions where my father would try a recipe out himself. It usually would be outdoors on the grill or to accompany something cooked on the grill. Here is a favorite – the absolute best blue cheese dressing you have ever had. This is courtesy of Dad and whatever steakhouse inspired him. Dad would ambitiously make this dressing in a mason jar, shaking vigorously to get the right consistency. I’m going to suggest grilling some romaine lettuce and sliced heirloom tomatoes to accompany this dressing in honor of Dad’s passion for steakhouse dining and grilling! Enjoy!

Dad’s Favorite Blue Cheese Dressing

Ingredients
6 ounces Maytag Blue Cheese
1/4 cup olive oil
2 tablespoons cider vinegar
1 tablespoon heavy cream
1 tablespoon sour cream
1/2 teaspoon worcestershire sauce
1 teaspoon fresh lemon juice
1 teaspoon fine sea salt
1/2 teaspoon fresh ground black pepper
1/8 teaspoon cayenne pepper
Directions
In a medium size mixing bowl crumble in the blue cheese add the remaining ingredients and whisk together until emulsified. Pour ingredients into a glass covered jar and keep in the refrigerator until ready to use. Shake ingredients well before spooning onto your favorite salad.
For salad pictured:
Take Romaine lettuce leaves and brush with olive oil, place on grill until lettuce starts to wilt and brown. Remove from grill and place on platter along with slices of heirloom tomatoes.
Lettuce can also be roasted in a 400 degree F oven. Place oiled lettuce leaves on to a baking sheet and roasted about 10 minutes until lettuce starts to wilt and brown, then remove from oven.

Raspberry Rhubarb Cobbler

There is a new favorite summer dessert here by the bay and it’s a cobbler! What makes this cobbler different is that I make little individual portions. This is the perfect combination of fruit, juice and biscuit topping. Out shopping one day,  I fell in love with these little ramekins. Of course I had to own them. So when these ramekins ended up on my pantry shelf , they were just begging to be used. I went through my usual quick dessert list and cobbler seemed a natural, rolling out the dough and using my biscuit cutter to make the perfect size biscuit to place on top of my dessert. Sometimes cobbler can be too juicy and the biscuit can become soggy, but not this version. I experiment with the fruit combinations depending on availability but the tartness of rhubarb combined with sweet raspberries is our favorite. Don’t get me wrong here,  no one is refusing this little gem of a dessert made with other fruits. It’s that good!

Raspberry Rhubarb Cobbler
Serves 6
Ingredients
Filling
2 cups chopped rhubarb
1/2 cup red raspberries
1 teaspoon fresh lemon juice
1/4 teaspoon almond extract
6 tablespoons granulated sugar
1 tablespoon cornstarch
1/8 teaspoon salt
Biscuit topping
1 cup flour
1 teaspoon baking powder
2 tablespoons granulated sugar
1/8 teaspoon salt
4 tablespoons cold unsalted butter, cubed
4 tablespoons buttermilk, plus extra to brush top of biscuit
Directions
Preheat oven to 375 degree F. In a bowl mix all the filling ingredients together. Divide filling between 6- 4 ounce ramekins, placed on parchment lined baking sheet. To make the biscuit topping place flour, baking powder, sugar and salt into a food processor and pulse. Add the butter and pulse until butter is pea size. Add the buttermilk and combine. Turn dough out onto a floured surface and roll or pat dough into a rectangle about 1 inch thick. Cut into 6 rounds using a 2 1/2 inch biscuit cutter. Place one round on top of filling in each ramekin. Brush the top of each biscuit with buttermilk and place into the oven for about 1 hour. The biscuit should be golden brown and the filling bubbling. Let stand to cool for at least 30 minutes. Serve warm or at room temperature.

Cubano Burger

 

Summer is almost here! The pool is open. The lounge chairs and umbrellas are set up. Blue skies and bright sun are overhead. I can walk into my backyard and imagine I’m on vacation, hmmm the South of France, Southern California, I think today feels like South Beach, Miami. South Beach is my inspiration for this Cubano Burger. Poolside dining doesn’t get better than this american twist on the cuban sandwich. I make my burger with ground pork mixed with fresh citrus, then  accented with ham, cheese and roasted garlic. Try this burger and whisk yourself and your guests off to South Beach too!

Cubano Burger
Serves Six
Ingredients
1 head of garlic
1/2 teaspoon olive oil, plus more for brushing the grill
2 pounds ground pork
1/2 teaspoon fresh ground black pepper
1/2 teaspoon ground cumin
2 teaspoons lime juice
2 teaspoons orange juice
6 ciabatta rolls
12 slices baby swiss cheese
12 dill pickle slices
6 slices boiled ham
1/2 cup store bought mayonnaise
Directions
Preheat oven to 400 degrees F. Rub olive oil on head of garlic and wrap garlic in aluminum foil. Place on baking sheet roast for 30 to 35 minutes until garlic feels soft, then remove from oven and cool. Cut top off garlic head and squeeze garlic cloves out of skin and into a bowl. Mash garlic and then add mayonnaise and mix well. Cover and place into refrigerator until ready to use. In a mixing bowl add the ground pork, pepper, cumin and citrus juices. Mix well with your hands and form 6 patties. Fire up the grill. Brush grill with olive oil and cook patties approximately 15 minutes per side, until pork is cooked through. Once ready, cut rolls in half, place on baking sheets and top each side with a slice of swiss cheese. Remove from oven once the cheese starts to melt. To assemble : take one half of bun with cheese, place burger on top, spread garlic mayonnaise on burger, add slice of ham, then pickle slices and top with other half of the bun. Repeat to make the remaining burgers. Serve immediately.

Grandma’s Coleslaw with Warm Dressing

When I think about perfect no fuss side dishes for the summer my grandmother’s coleslaw always comes to mind. My paternal grandparents were Gottscheers, descendents of a small colony founded in 1350 with only 300 families. Gottscheers lived in a small area within the Austro- Hungarian Empire only 331 square miles. Customs and ltheir own dialect was handed down generation to generation, as were recipes. My grandparents were part of the large emigration from their homeland to the United States in the early 1900’s. Gottscheers remained close once they arrived in the United States. My grandparents were part of the Gottscheer group living in Ridgewood, Queens. My grandparents and their friends would socialize often, which included Sunday night card games. this coleslaw was served many, many sunday nights and it brings to mind love, friendship and just having a good time.

Grandma’s Coleslaw with Warm Dressing
Serves Six

Ingredients
1 medium head of cabbage, quartered removing core
1/2 cup white vinegar
1/4 cup fine granulated sugar
2 teaspoons fine sea salt
1/2 cup vegetable oil
1/2 teaspoon caraway seeds
1/2 teaspoon celery salt
1/2 teaspoon fresh ground black pepper

Directions
Using a mandoline over a large mixing bowl, finely shred one head of cabbage. Set aside. To make dressing bring to a boil in a small medium sauce pan  the vinegar, sugar and sea stirring occasionally. Boil until the sugar and salt have dissolved.  Slowly add the oil and bring back to a boil. Remove pan from heat and pour dressing over the cabbage. Add caraway seeds, celery salt and pepper. Mix well. Place into a mason jar or container. Store at room temperature or
in the refrigerator for at least 2 hours before serving.

Rosemary Baked Beans

What’s another easy and impressive side dish to serve guests this Memorial Day Weekend? Homemade Rosemary Baked Beans. It is a quick toss of ingredients and then bake in the oven and you have taken this ordinary side dish into an extraordinary treat! Using cannellini beans makes the dish lighter and fresh rosemary really steps up the taste. If you are making the ketchup from last week’s post this is another perfect use.  It’s definitely another taste sensation!

Rosemary Baked Beans
Serves 4

Ingredients
2 28 ounce cans cannellini beans, drained in rinsed
6 tablespoons ketchup, homemade if possible
1/4 cup dark molasses
1 tablespoon dark brown sugar
1 teaspoon smoked paprika
1 teaspoon chopped rosemary
1/2 teaspoon cider vinegar
1/2 teaspoon fine sea salt
1/4 teaspoon fine black pepper
6 slices bacon
Directions
Preheat oven to 350F. In a mixing bowl add all ingredients except the bacon and mix well. Pour the beans into 2 lodge mini 12 ounce servers. Cover with top with bacon strips and place on a baking sheet and place in the over for 25 minutes or until bacon is browned and fat rendered. Serve warm.

Savory Ketchup

Well, Memorial Day is not too far away, so I’m going to start blogging about some great recipes for celebrating this holiday weekend. I am sure you have been wondering why in the world make ketchup? Well, I have some very good reasons for suggesting that you do. The first one is this ketchup is much more delicious than any store bought ketchup. The second is that it’s healthy, you can control the amount of sodium and there are no preservatives. The third reason is this is SO EASY to make. My last reason and most important reason is that it will totally impress your guests, making them feel that they are special even if are serving burgers and hot dogs. I think especially for a long holiday weekend where you might be barbecuing through out the weekend , it’s worth the extra effort to have a batch of fresh ketchup ready in the fridge. I keep the ketchup in a mason jar so that it’s easy to bring to the table so guests can spoon some of this savory ketchup on top their food. Make this Memorial Weekend a real celebration and come back for more holiday recipes.

Savory Ketchup
2 tablespoons olive oil
1 small red onion, chopped
2 garlic cloves, chopped
1/4 teaspoon red chili flakes, or 1/2 teaspoon fresh red chili, chopped
1 28 ounce can puree tomatoes
1/4 cup water
1 tablespoon tomato paste
1/2 cup dark brown sugar
1/2 teaspoon allspice
1/2 teaspoon dried mustard
1/2 teaspoon fine sea salt
2 tablespoons cider vinegar
1 1/2 teaspoon lemon juice
In a medium sauce pan heat olive oil, add the onion, garlic and chili and saute until soft. Add tomatoes, sugar, tomato paste, bay leave and spices. Simmer uncovered 25 minutes. Add vinegar and lemon juice. If the ketchup seems very thick you can add another tablespoon or two of water. Simmer 10 more minutes. Remove bay leave. Set aside to cool. Once cool, puree in food processor , place in glass mason jar and store in the refrigerator until ready to use.

Lemon Bars

When I think of Mother’s Day, of course my own mother and grandmothers come to mind. Part of their legacy to me is my passion for cooking. I stood at their side just a little girl as an eager student. When I think of making this recipe for lemon bars, I think of my niece, eager at 6 years old , ready to learn to cook. My niece helped me every step of the way. Ashley squeezed the lemons, made the dough, her tiny fingers pressing the shortbread into the bottom of the pan.  I will never forget the look of pride on her face when the lemon bars were done and she served them to the family. Sharing my passion with my young niece was a very special way to celebrate Mother’s Day!

Lemon Bars
makes 9 bars or 18 small bites

Crust:
1 cup flour
1/2 cup confectioner’s sugar, plus more for dusting bars
pinch salt
1 stick  unsalted butter softened, plus more for greasing

Filling:
3 eggs
1 1/2 cup fine sugar
1 tablespoon lemon zest
1/2 cup fresh lemon juice
1/2 cup flour
1/2 teaspoon baking soda

Directions

Preheat oven to 350F. Lightly grease a non stick pan 8 by 8
Make the crust by combining  flour, confectioner’s sugar, salt into a bowl. Add butter and mix with your hands to make pea size crumbs.  Turn into the greased pan and press the dough down into the bottom of the pan covering it all. Place in oven and bake for 20 minutes. Take out and cool.
While crust is baking make filling by using an electric mixer to combine the eggs, sugar, zest, juice, flour and baking soda. Mix until smooth. Pour filling into baked crust and bake for 35 minutes until filling is set. Take out of the oven let cool and cut into 9 bars. Dust with confectioner’s sugar and serve.

Buttermilk Pancakes with Strawberries and Lime Butter

Pancakes make people happy! That was the motto of the Royal Canadian Pancake House, which existed for an all too brief time in Manhattan in the 1990’s. But their clever motto still rings true today. I would be hard pressed to find someone in my world who doesn’t love pancakes. My sister Nancy is on top of the “Pancakes make people happy” list! Now she would never refuse a pancake but she certainly is selective in picking a favorite. These buttermilk pancakes won Nancy’s approval, they are light and fluffy from the buttermilk. I added some lime butter to compliment the fresh strawberries. You’ll want to try this recipe this weekend! Enjoy!

Buttermilk Pancakes with Strawberries and Lime Butter
Serves 4-6

Ingredients
11/2cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups buttermilk
2 large eggs, at room temperature, separated
Fresh strawberries, sliced and confectionery sugar

Directions
In a medium bowl combine all dry ingredients and mix. To this add the buttermilk and egg yolks and combine- do not over mix. Batter will be a little lumpy. In another bowl add egg whites. Using an electric mixer, beat egg whites until it is in soft peaks. Fold egg whites with rubber spatula into the batter. Set aside for 20 minutes. Heat a griddle pan and spread 1/4 cup of batter for each cake, Cook two minutes on the first side and flip and cook another minute. Place on baking sheet and keep warm in oven until all cakes are made and ready to serve. Serve with sliced strawberries, confectionery sugar and lime butter.

Lime Butter

Ingredients
1 stick unsalted butter, softened
2 teaspoons fresh lime juice
1 teaspoon lime zest

Directions
To butter add lime juice and zest and combine well.  Keep in refrigerator until ready to use.

Raspberry Citrus Cream

These happy little pots of cream and berries are the perfect springtime dessert! These little pots are a light end to a meal and utilizes the berries that start to become readily available this time of year. You can use blueberries as well for this recipe. It’s like being in Paris for the spring!

Raspberry Citrus Cream

Serves 4


Ingredients

½ pint raspberries

2 large eggs

1/3 cup fine sugar

1 tablespoon lemon juice

½ teaspoon lemon zest

½ cup heavy cream

1 tablespoon framboise liquor

Confectionary sugar for top


Directions

Preheat over to 300F. Use four 6 oz. ramekins and divide berries into each. Keep a few berries aside to garnish later. In a bowl whisk together eggs, sugar, lemon zest and juice until well combined.  Next add the cream and framboise liquor and whisk again until smooth. Pour mixture into the ramekins. Take a small roasting pan place ramekins into pan, enough hot water to reach half way up to the ramekins. Bake until set approximately 30 minutes. Serve warm or keep in refrigerator covered until ready to serve. Cream can be eaten cool. When serving shift some confectionary sugar on top and garnish with extra raspberries. 

 

Grilled Spicy Shrimp with Harissa Mayonnaise

Growing up if you asked me my favorite food , there was only one answer: Shrimp –  lots of it fried. i considered myself a fried shrimp connoisseur in those days. Although, i have really expanded my food horizons, shrimp is still one of my favorite foods and I am always looking for new ways to prepare them. I first tried Harissa, a spicy paste, on a buying trip to Paris and I have enjoyed experimenting with it as an ingredient ever since. You can find Harissa as a paste in either a tube or can from food specialty stores. It is from North Africa and it is made primarily of chili peppers and garlic along with cumin and coriander. It’s a great quick way to add heat to a dish. My favorite use is in this shrimp dish. The Harissa mayonnaise is also a great complement to potato fries, with grilled meats or to use on sandwiches.

Grilled Spicy Shrimp with Harissa Mayonnaise
Serves 4
1 lb Raw large shrimp, cleaned with tails
4 tablespoons olive oil
1 tablespoon fresh lemon juice
1 tablespoons Harissa Paste

2 tablespoons fresh cilantro, chopped

Directions

Place all ingredients into a sealed plastic bag and marinate for at least 2 hours. Soak wooden skewers in water for one hour. Heat outdoor grill or grill pan, skewer shrimp and grill shrimp approximately 3-4 minutes per side until pink. Serve with Harissa mayonnaise.

Harissa Mayonnaise

1 cup mayonnaise

1 tablespoon Harissa Paste

1 tablespoon Ketchup

1 tablespoon lemon juice

Directions

Place all ingredients in a bow, and mix well. Serve with grilled shrimp
