Entertaining: What’s Cooking this Weekend!

Enjoying another summer weekend,  I think I’ll wake up early and make a batch of my favorite Homemade Granola, perfect with some greek yogurt and all the seasonal berries.

After breakfast and a quick class at the gym it’s off to the farmstand, where I’m bound to find some of my favorite ingredients – sweet corn, kirby cucumbers and some juicy peaches.

I don’t plan to spend much time in the kitchen this weekend, but I will make some quick pickles using my recipe for Pickled Cucumbers with Dill and Lemon.

I’m keeping it simple this weekend, something quick on the grill – one of my favorite chicken recipes is Barbecue Chicken Breasts with Fresh Peach and Jalapeno Sauce

Corn of course is the perfect side dish – anyway you want to serve as long as you eat it the day it’s picked on the farm the freshness is the star of the show – so grill, boil, it’s so fresh you can eat it raw, but if you want to try a new corn side dish, you will want to try my recipe for Corn in a Cup!

Now for dessert, it’s an easy  Stone Fruit Crostata, using the rest of my peaches!  a recipe that is so forgiving and beyond delicious with it’s crispy and buttery crust.

Guacamole
Serves 4

Ingredients
3 Haas avocados, ripe
3 tablespoons lime juice
1/4 cup scallions, chopped
1/4 cup cilantro, chopped
1 teaspoon sea salt

Directions
In a medium bowl add the lime juice and sea salt , let the salt dissolve. Cut and remove flesh from avocado and place into bowl with lime juice /salt along with scallions and mash with fork. Add ingredients listed below depending on the version you are making and mix well. Keep refrigerated until ready to serve.

Jalapeno Burger

Serves 4

Ingredients

1 1/2 pounds ground beef chuck ( each pattie 6 ounces)
4 ciabatta rolls
8 slices bacon
4 slices colby cheddar cheese
1/2 cup mayonnaise
3 tablespoons jalapeno rings, coarsely chopped
Directions

In a food processor add mayonnaise and jalapeno. Process until well blended. Refrigerate until ready to use. Make 4 patties from the ground beef, shaping into ovals. In a medium sauce pan, fry bacon until crispy, place on paper towel to drain. Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Season one side of patties with salt and pepper; place on grill, seasoned side down. Grill until lightly charred on bottom, about 4 minutes. Season other side, turn, and top with cheese. Grill to desired doneness, about 4 minutes longer for medium. Transfer burgers to dish and let stand for 3 minutes before serving. Meanwhile, toast buns on grill on until the edges start to brown. Remove bottoms of each bun and add cheese to tops to melt. To assemble burger take toasted bottoms, spread jalapeno mayonnaise on each bottom. Add the burger, the bacon and then top with bun with melted cheese. Serve immediately.

Bloody Mary Mix with Candied Bacon

Makes approximately 32 ounces of mix

Ingredients

1 (25-ounce) jar tomato passata, preferably San Marzano or best quality tomato juice
3 tablespoons freshly grated horseradish or best quality prepared grated horseradish
1/2 cup fresh lemon juice from 4 to 5 lemons
3 celery stalks, cut into 1 inch pieces
1/2 cup water
1 tablespoon white vinegar
1 teaspoon balsamic vinegar
1 teaspoon fine grey sea salt
1 teaspoon celery salt
1 1/2 teaspoons fresh ground black pepper
1/8 teaspoon cayenne pepper
8 slices bacon, 1/4 inch thick, best quality
1/4 cup dark brown sugar
Directions
Place tomato passata in a bowl. In a food processor add the celery and 1/4 cup water and blend. Strain liquid into a cup. You should have about 1/4 cup liquid. Discard the solids and add the celery infused water to the tomatoes. To the tomato base add horseradish, lemon juice, remaining 1/4 cup water, vinegars, salt, 1/2 teaspoon black pepper and cayenne. Refrigerate until ready to use. About an hour before serving preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Place bacon, brown sugar and 1 teaspoon black pepper in a bowl. Mix well. Place slices bacon flat onto the parchment paper. Sprinkle any remaining sugar on the bacon. Cover bacon with a second sheet of parchment. Place a second baking sheet on top of the parchment. This will keep the bacon flat while cooking. Place in the oven and bake for 20 minutes, remove top baking sheet and parchment paper and let continue to bake another 10 minutes or until crispy and a dark brown color. Remove from oven and place on rack to cool immediately.

BLOG HOT WINGS

CRISPY BAKED HOT CHICKEN WING RECIPE
Adapted from Bon Appetit Test Kitchen

INGREDIENTS
HONEY BUFFALO SAUCE
1 tablespoon unsalted butter, melted
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
1/4 cup hot pepper sauce
1/4 cup honey
WINGS
3 pounds chicken wings, tips removed, drumettes and flats separated
1 tablespoons vegetable oil
1 1/2 teaspoons fine sea salt
1/2 teaspoon freshly ground black pepper

DIRECTIONS
Preheat oven to 400°. Set a non stick wire rack inside each of 1 large rimmed baking sheet lined with foil. Place all ingredients in a large bowl; toss to coat. Place wings on the prepared rack and spread out in a single layer. Bake wings until cooked through and skin is crispy, 45–50 minutes. Remove wings from oven place in bowl, pour sauce on top toss and place back in the oven. Bake for 10 minutes until it starts to brown. Serve immediately.

Orange Cranberry and Dark Chocolate Chip Cookies
Makes 2 1/2 Dozen cookies

Ingredients
1 cup all purpose flour, plus two tablespoons
1/2 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons unsalted butter, softened
1/2 cup dark brown sugar
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1 egg
6 ounces bittersweet chocolate, chopped
1 teaspoon orange zest
1 teaspoon orange juice
1/2 cup dried cranberries

Directions
Preheat over to 375 degrees F. In a large bowl add the butter, sugars and vanilla. Use an electric mixer and beat ingredients until light and fluffy. Add the egg , orange rind and juice and beat in well. In another bowl, sift together the flour, baking soda and salt. Add to the butter mixture slowly and mix at a low speed. Next add the chopped chocolate and dried cranberries and combine. Drop in rounded teaspoons of dough onto ungreased baking sheets. Bake for 9 to 10 minutes, until slightly brown on bottom. Remove and cool on wire racks. Store in air tight containers.

Fried Chicken Cutlet over Dandelion Greens

This is a mash up of  chicken milanese on a bed of arugula  with some favorite flavors of southern cooking, with a great end result. The chicken is marinated in buttermilk and hot sauce and then dipped in breadcrumbs,  with a nice crunchy result with a little kick too!  This chicken is actually much easier to make than the traditional milanese version that requires dipping in flour then egg then breadcrumbs. The dandelion salad is perfect complement with a slightly peppery taste , enhanced with the taste of lemons! It’s perfect summer dining!

Fried Chicken Cutlet over Dandelion Greens

Serves 4

Ingredients

  • 1 pound extra thin skinless chicken cutlet
  • 2 cups buttermilk
  • 1 teaspoon hot sauce
  • 3 cups panko crumbs
  • 1 cup flour
  • 1 teaspoon hot paprika
  • 1 teaspoon fresh ground black pepper
  • canola oil
  • bunch of dandelions greens bottoms removed and cleaned
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • fine sea salt and fresh ground black pepper to taste
  • lemon slices, to garnish
  • grated parmesan cheese

Directions

In a shallow bowl add buttermilk and hot sauce. Whisk together. Add chicken cutlet , cover with plastic wrap and  place in refrigerator for two hours. Bring to room temperature before cooking.  In food processor add panko crumbs and process into fine crumbs.  In a shallow bowl add panko, flour, paprika and pepper. Mix well.  Remove chicken from buttermilk and dredge in the panko mixture on both sides.  Let sit on a baking sheet as you coat the rest of the chicken. In the meantime, In a large saucepan add 1/2 inch canola oil . Place oil on medium to high heat. Test the oil by flicking flour or bread crumbs into the oil. If it doesn’t sizzle, wait or the chicken will be soggy. When the oil is hot, test it again by dipping the edge of a piece of chicken into the oil, the oil should gently sizzle. Cook the chicken in the oil in batches on both sides until it is a lovely golden brown color and is crispy, about 4 to 5 minutes. Do not crowd the pan or the chicken will become very greasy and soggy. When the chicken comes out of the oil lay it on paper towels to drain off the excess oil and sprinkle with salt. You can keep the chicken in a low oven to keep it warm while the rest of the chicken is cooking. Prepare greens by tossing with olive oil, lemon juice, salt and pepper.  Place greens on a platter and add the chicken cutlets. Garnish with lemon slices and cheese. Serve immediately.

Hint: When shopping for dandelion greens make sure that you are getting young greens, that are GREEN, if they are older they will be yellow, the stalks harder……organic is the way to go with this green, otherwise use arugula as you salad.

 

 

Chicken and Avocado Mayonnaise Sandwich

 

I am one of those cooks who hates to waste food. In fact, some of my favorite recipes are the result of leftovers or ingredients that are it the kitchen waiting to be used or they might next be in the trash. That’s how the avocado mayonnaise recipe came about, with my single avocado just ripe in my vegetable basket and calling out to be used before it’s too late.  The avocado mixed with just a touch of mayonnaise, some lime juice and jalapeno pepper resulted in the luscious dressing that was delicious all on it’s own.  The sandwich has a similar story, I had chicken cutlets let over from the previous night’s dinner and needed to figure out a way to use the leftover cutlets in a completely different way. Both recipes are so delicious and worth planning as a meal.

Avocado Mayonnaise

Ingredients
1 Haas Avocado
2 tablespoons store bought mayonnaise
1 tablespoon lime juice
1/2 teaspoon fine sea salt
1/4 teaspoon fresh ground black pepper
1 teaspoon jalapeno pepper, chopped
Directions
Place all of the ingredients into a food processor and mix until smooth. Refrigerate in a air tight container until ready to use.

Chicken and Avocado Sandwich
Serves 1
Ingredients
1 Breaded/Cooked Chicken Cutlet
1 Ciabatta roll
1 teaspoon olive oil
2 tablespoons avocado mayonnaise ( see recipe)
1 slice of white cheddar cheese
1/4 cup fresh baby arugula leaves
Directions

Preheat oven to 400 degrees F. Cut ciabatta roll in half. Place each half on a  baking sheet and brush the open sides with olive oil. Bake for approximately 5 minutes until roll starts to brown. Remove from oven the bottom of the roll. Place the cheese on the remaining side and place back into the oven for another 2-3 minutes until the cheese starts to melt. While melting the cheese assemble the sandwich. On the toasted bottom place the arugula leaves, top with chicken cutlet and spread the avocado mayonnaise on top of the chicken. Remove the bread with melted cheese and top the sandwich. Cut in half and serve immediately.

Barbecue Chicken Breasts with Fresh Peach and Jalapeno Sauce

Barbecue Chicken Breasts with Fresh Peach and Jalapeno Sauce
Serves 6
6 Chicken Breasts, bone in and skin
1/4 cup olive oil
juice of 2 limes
2 garlic cloves, peeled and crushed
1 tablespoon coarse sea salt
 1 recipe of Fresh Peach and Jalapeno Barbecue Sauce
Directions
Place all ingredients except barbecue sauce into a resealable plastic bag and marinate the chicken for several hours  before cooking. Preheat oven to 325F and empty contents of plastic bag into baking dish with chicken breast skin side up. Bake for 1 hour. Heat grill and using approximately 3/4 of the barbecue sauce brush generously the skin side of the breasts and place skin side down onto the grill. Brush the back of the breasts, now with sauce. Cook until skin begins to char on each side. Remove and serve warm with remaining barbecue sauce on the side, reheated and warm.

Fresh Peach and Jalapeno Barbecue Sauce
2 1/2 cups fresh peaches, stoned and chopped
1/2 cup ketchup
1/4 cup peach preserves
1 tablespoon garlic, chopped
3 tablespoons olive oil
2 tablespoons light soy sauce
1 tablespoon dijon mustard
1 tablespoon jalapeno chopped
1 tablespoon lime juice
1/2 teaspoon hot sauce
1 teaspoon salt
1/2 teaspoon ground black pepper
Directions
Place on ingredients into a medium sauce pan and place onto a medium heat. Stir ingredients and bring to a boil. Reduce heat and simmer for 30 minutes. Cool and blend in a food processor. Place in a jar until ready to use . Barbecue sauce will last 3 days

Best Crispy Baked Hot Chicken Wing Recipe

I may not be a big football fan, but I am a fan of Game Day Food and Super Bowl Sunday. A must have for game day is of course hot chicken wings. I did a lot of recipe testing to find a recipe that delivered super crispy wings without having to fry. This recipe from Bon Appetit delivered on the crispiness and taste without being dry. It’s a perfect game day food and super easy to make.

One Pan Roast Chicken and Vegetables

I love the holiday season, but with that we are all rushing to get so much done. The days are already filled with work, family and friends. When the holiday season arrives there are the extra activities of shopping for gifts, decorating the house and extra entertaining. So with that I love when I have a recipe that is easy, simple and delicious. This one pan roast chicken and vegetables is just so easy to assemble and it looks and tastes just amazing. My recipe suggests certain vegetables to surround the chicken, but you can easy use other vegetables if you like such as carrots, asparugus, scallions, cauliflower or sliced peppers and onions. If  any of the vegetables seemed to have cooked too quickly, just take them of the pan , cover with foil and put the pan back into the oven to finish roasting. The dish is not only easy to make, it’s all a quick clean up. Especially, if you use a nice non stick pan such as scan pan, it’s about a 1 minute to clean up. So find yourself some extra time for the holiday acitivities with this quick dish.From by the bay wishing you speedy food memories!

One Pan Roast Chicken and Vegetables
Serves 4 
 
Ingredients
1 organic chicken – 3 to 4 pounds
2 thick slices of bread, such as sourdough
2 heads garlic, sliced across the middle
2 bay leaves
6 – 8 shallots peeled
4 ounces brussel sprouts
1 medium sweet potato, peeled and sliced
4 small purple potatoes, sliced
5 strips of thick bacon
2 tablespoons olive oil
2 tablespoons butter
1 tablespoon maple syrup
salt and pepper
Directions
Preheat oven to 400 degrees F . Drizzle the bottom of the baking pan with olive oil. Place two slices of bread in pan. Bring chicken to room temperature and season with salt and pepper inside the cavity and outside. Place chicken on top of the bread in the baking pan. Wrap the chicken with bacon, drizzle with maple syrup and top with butter. Add the remaining vegetables around the chicken. Drizzle with remaining olive oil and season with salt  and pepper. Place in the oven and roast chicken until the bacon is crisp and the chicken is 175 degrees F and the juices run clear, approximately 1 1/2 hours. If the vegetables look dry add a little water or white wine. Let chicken rest for at least 15 minutes before carving. Serve with the roasted vegetables and bread from the pan.
