Wild Mushroom Soup

To warm up on a fall chilly evening, you’ll love the light yet earthy taste of this wild mushroom soup! I love to use a mix of mushrooms depending on what’s available along with some dried porcini or chanterelle’s, a staple in my pantry. This is a soup you can prepare quickly. The earthy mushroom taste is brightened with some lemon zest and juice and there is a hint of heat from the red chili flakes. This dish is very versatile, whether you make it for a quick weeknight dinner or serve as a first course for a special dinner party. Enjoy!

Wild Mushroom Soup

Ingredients

2 ounces dried porcini and/or chanterelles
4 tablespoons unsalted butter
8 ounces mixed fresh wild mushrooms , clean and sliced
1/4 teaspoon red chili flakes
2  shallots , peeled and finely chopped about 1/2 cup
1 handful fresh thyme , leaves picked
sea salt
freshly ground black pepper
32 ounces organic low sodium chicken or vegetable stock
1/4 cup fresh flat-leaf parsley , leaves picked and roughly chopped
1 cup half and half
1 lemon (1/2 teaspoon zest and 1 teaspoon of juice)
Directions

Place the dried mushrooms in a small dish, add boiling water just to cover, and leave to soak. Heat a large stock pot pan, then add olive oil and your fresh mushrooms. Stir around very quickly for a minute, then add chili flakes, shallots and thyme and a small amount of seasoning. Saute a minute add half of your porcini/chanterelles chopped up, and the rest left whole. Strain the soaking liquid to remove any grit, and add it to the pan. Cook for about 20 minutes until most of the moisture disappears. Season to taste, and add your stock. Bring to the boil and simmer for around 20 minutes. Remove half the soup from the pan and purée  in a food processor then pour it back in stock pot. Add  the parsley, cream, lemon zest and juice. Adjust salt and pepper to taste and serve warm.

Apple Cider Braised Pan Seared Bratwurst and Apples with Red Cabbage Slaw

To welcome Fall and celebrate my German heritage, I made this platter of cider braised bratwurst and then pan seared both the brats and some crisp apples all served on a red cabbage slaw, It was the perfect autumn dish a study in contrasts : slightly sweet and salty, softened apples mixing with the crispy slaw. It’s my modern take on the more classic brats with sauerkraut.

Apple Cider Braised Pan Seared Bratwurst and Apples with Red Cabbage Slaw

Serves 8

Ingredients

4 cups apple cider

8 bratwurst

4 apples , skin on cut in half

1 tablespoon canola oil

1/4 cup white wine

2 tablespoons white vinegar

1 recipe red cabbage slaw ( recipe follows)

Directions

In medium sauce pan add bratwurst and cider, bring to a simmer and cover for 15 minutes remove from heat. Remove bratwurst remove brats from pan and set aside. Heat oil in a large cast-iron or other heavy skillet over medium-high heat. Add apples, cut side down, and cook, turning occasionally, until golden brown, 5–8 minutes. Prick brats with a fork, add to skillet with apples, and cook, turning occasionally, until browned, 5 to 8 minutes. Add wine and vinegar to skillet. Bring to a boil, reduce heat, and simmer until thickened (liquid should coat a spoon), about 4 minutes.

To serve place red slaw on a platter , add apples and brats and enjoy!

Red Cabbage Slaw

Ingredients

For the Slaw
1 small head of red cabbage, cored and shredded
1 small red onion, sliced thinly
1/2 teaspoon caraway seed (optional)
Sea salt, to taste
Cracked black pepper, to taste

For The Dressing:
1/4 cup of apple cider vinegar
1 tablespoon of pure maple syrup
2 teaspoons Dijon mustard
1 pinch of cayenne pepper (optional)
Sea salt, to taste
Cracked black pepper, to taste
1/4 cup canola oil

Directions

In a large mixing bowl add cabbage, onions, caraway seed, salt and pepper.  In a large covered jar add ingredients for dressing and shack vigorously. Pour dressing over cabbage and mix well. Set aside.

Blueberry Merlot Sauce with Vanilla Gelato

2 cups fresh blueberries
1 cup Merlot
½ cup light brown sugar
1 tablespoon cornstarch
½ teaspoon vanilla

Directions

Combine all ingredients in a medium sauce pan. Simmer for 20 minutes stirring occasionally. Cool and place in a container. Keep in refrigerator until ready to use.
Serve as a topping to vanilla gelato.

Sweet Corn and Blueberry Ice Cream

Makes about 1 quart

Ingredients

  • 4 ears fresh young corn, shucked
  • 2 1/2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1 1/2 teaspoons xanthan gum
  • 1 cup whole fresh blueberries
  • 1/4 cup sugar

Directions

Cut kernels off each ear of corn and place into a large saucepan. Break cobs into pieces and also add to pan. Add to the pan the milk, cream , 3/4 cup sugar and xanthan gum. Place on medium heat , bring mixture to a low boil for 5 to 10 minutes until mixture is thicken slightly and sugar is dissolved. Remove from heat, remove cobs. Using an immersion blender, puree kernels. ( You can also use a blender to liquidfy but the immersion blender is quickest and easier clean up). Let corn mixture infuse for about an hour and then pass the mixture through a fine sieve into a bowl. When straining make sure you are using the back of a spoon to push the liquid through. Also scrap the liquid from the bottom of the strainer in the bowl. Place bowl in the refrigerator to chill for 2 to 3 hours. In the meantime, to a small sauce pan add blueberries and 1/4 cup sugar in a small saucepan . Place on medium heat until the blueberries start to pop and mixture thickens. Set aside to cool. Make the sweet corn mixer in an ice cream maker according to directions. Right when the ice cream is ready slowly pour the blueberry sauce into the ice cream to swirl one or two times. Pour into a freezer safe container and store in freezer until ready to serve.

Blueberry Boy Bait
From Smitten Kitchen , which adapted it from  the Cook’s Illustrated version, which was adapted from the original

 

Serves 12, generously

2 cups (250 grams) plus 1 teaspoon all-purpose flour
1 tablespoon baking powder
1 teaspoon table salt
16 tablespoons unsalted butter (2 sticks, 8 ounces or 225 grams), softened
3/4 cup (145 grams) packed light brown sugar
1/2 cup (100 grams) granulated sugar
3 large eggs
1 cup (235 ml) whole milk (though buttermilk, which was all I had on hand, worked just great)
1/2 cup (about 85 grams) blueberries, fresh or frozen (if frozen, do not defrost first as it tends to muddle in the batter)

Topping
1/2 cup (about 85 grams) blueberries, fresh or frozen (do not defrost)
1/4 cup (50 grams) granulated sugar
1/2 teaspoon ground cinnamon

For the cake: Adjust oven rack to middle position and heat oven to 350 degrees. Grease and flour 13 by 9-inch baking pan.

Whisk two cups flour, baking powder, and salt together in medium bowl. With electric mixer, beat butter and sugars on medium-high speed until fluffy, about two minutes. Add eggs, one at a time, beating until just incorporated and scraping down bowl. Reduce speed to medium and beat in one-third of flour mixture until incorporated; beat in half of milk. Beat in half of remaining flour mixture, then remaining milk, and finally remaining flour mixture. Toss blueberries with remaining one teaspoon flour. Using rubber spatula, gently fold in blueberries. Spread batter into prepared pan.

For the topping:
Scatter blueberries over top of batter. Stir sugar and cinnamon together in small bowl and sprinkle over batter. Bake until toothpick inserted in center of cake comes out clean, 45 to 50 minutes. Cool in pan 20 minutes, then turn out and place on serving platter (topping side up). Serve warm or at room temperature. (Cake can be stored in airtight container at room temperature up to 3 days.)

Buttermilk Blueberry Muffins

Makes 12 muffins

1 1/2 cups all purpose flour

1/4 cup white sugar

1/4 teaspoon salt

2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon lemon zest

4 tablespoons melted butter

3/4 cup buttermilk

1 egg

3/4 cup fresh blueberries

Directions

Preheat oven to 400 F. Take a 12 muffin pan and line with paper baking cups. Put  tin to the side. In a bowl combine flour, sugar, salt, baking powder, baking soda and lemon zest. Add melted butter and stir. Add the egg to the buttermilk , mix and pour into the flour mixture and combine.Add blueberries and then fill each muffin liner about 3/4 filled. Place tin on baking sheet and bake  on the center rack for 20 to 25 minutes until cake tester comes out clean. Cool 5 minutes then remove muffins to wire rack to cool. Serve warm or room temperature.

Pan Fried Veal with Spinach, Blueberries and Hazelnuts

Serves 4

1 1/2 pounds veal scallopini

4 tablespoons olive oil

2 tablespoons balsamic vinegar

1/2 cup chicken broth

4 tablespoons unsalted butter

2 tablespoons  whole hazelnuts

2 tablespoons Panko bread crumbs

2 teaspoons fine sea salt

1/2 teaspoon fresh ground black pepper

1 garlic clove, chopped

1/4 teaspoon red chili flakes

2 tablespoons fresh blueberries

1 pound steamed fresh spinach

Directions

Toast hazelnuts and breadcrumbs on a baking sheet in a 400F oven for 2-3 minutes. Take toasted nuts and bread crumbs along with garlic, 1 teaspoon salt and red chili  flakes and process into coarse crumbs. Place in a bowl and add 2 tablespoons olive oil, mix and place to the side.  Flatten each scallopini between plastic wrap with a rolling pin until even. Coat veal with oil and season with salt and pepper. Heat a medium frying pan and saute veal 2 minutes per side until browned. Place on a platter and cover with foil. In the same frying pan add the stock , balsamic vinegar and bring to boil and reduce for 2 minutes. Whisk butter in pieces into the sauce. Remove from heat and add blueberries. Divide spinach  between four plates with veal on top. Spoon sauce on top of veal. Sprinkle top of veal with the hazelnut mixture and serve immediately,

Grilled Lamb Kefta Kebobs with Tzakiki

If you are tired of making hamburgers on the grill, but looking for something as easy and delicious, try these grilled lamb kefta kebobs. It’s a hamburger on a skewer, flavored with cumin, fresh mint and crunchy pistashios. I like to serve it on a warm pita topped with some homemade tzakiki, mint and red onion. Simply delicious.

Grilled Lamb Kefta Kebobs

Serves 4

Ingredients

1 1/2 pounds ground lamb

2 tablespoons ground pistachios

2 teaspoons ground cumin

2 teaspoons ground chili powder

1 tablespoon chopped fresh mint

1 teaspoon fresh lemon zest

1/2 teaspoon fine sea salt

1/4 teaspoon fresh ground black pepper

Directions

Place all the ingredients in a bowl and mix well. To make kebabs, take small amounts of kefta and shape them into cylinder or sausage shapes. Skewer the meat, squeezing it to mold it the skewer.Cook over hot coals, approximately five minutes each side. (It may take less or more time, depending on how hot the coals are, and how thick you shaped the kefta.) Watch the kebabs carefully, so you don’t dry out the kefta. Serve with Tzakiki ( recipe follows) and pita bread.

Tzakiki

Ingredients
1 English cucumber
1 tablespoon sea salt
2 cups greek style yogurt
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
2 tablespoons fresh mint, chopped
2 tablespoons olive oil
fine sea salt and pepper to taste

Directions
Peel and thinly slice the english cucumber. Coarse chop and place into a bowl. Add the sea salt and mix. Let sit for about 1 hour. Strain the cucumbers and rinse. Shake off remaining water and place into a bowl. Add the remaining ingredients and mix well. Adjust seasoning with salt and pepper to taste.  Place in the refrigerator until ready to use. When serving drizzle with a little more olive oil. Serve on the side of roasted lamb or serve as an appetizer with pita bread.

Natural Egg Dye Recipes

Red Beets / Pink Eggs – Grate 4 tablespoons of red beets and add to a heat safe container. Add 1 teaspoon white vinegar and 1 cup boiling water. Let sit for 1 hour, strain and add eggs to dye.

Red Cabbage/ Blue Eggs – Add 3 tablespoons chopped red cabbage to a heat safe container. Add 1 teaspoon white vinegar and 1 cup boiling water. Let sit for 1 hour, strain and add eggs.

Annatto Seeds/ Reddish Golden Color – Add 2 tablespoons annatto seeds ( achiote seeds) to 1 cup of water, bring to a boil for about 5 to 7 minutes. Strain. Add eggs to the dye.

Red Cabbage and Turmeric Powder/ Green Color – Add 3 tablespoons chopped red cabbage and 1/2 teaspoon turmeric powder to a heat safe container. Add one cup of boiling water. Let sit for 1 hour, strain and add eggs. The result is a speckled color.

Turmeric Powder/ Deep Gold Color – Add 2 teaspoons ground turmeric powder to a heat safe container. Add 1 teaspoon white vinegar and one cup of boiling water. Once dye is cool add eggs . Rinse off any residual powder.

Paprika Powder/ Light Orange – Bring one cup of water and 1 tablespoon of white vinegar to a boil, add 1 tablespoon paprika and continue to boil for 15 minutes. Place in a heat safe container, add eggs to dye while warm. Herb Crusted Leg of Lamb

Serves 6 to 8

Ingredients

1 leg of lamb approximately 9 pounds, bone in
1 teaspoon olive oil, plus 1/4 teaspoon
1 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
1 medium head garlic
1/4 cup olive oil 1/4 cup lemon juice
1 tablespoon dried oregano
1 teaspoon thyme leaves
zest of 1 lemon
1/4 cup chopped parsley
1 tablespoon all-purpose flour
1/3 cup chardonnay
1 1/2 cup chicken stock
1 tablespoon chopped rosemary
Directions

Let leg of lamb stand at room temperature for one hour. Preheat oven to 325 degree F. Rub lamb with 1 teaspoon olive oil, 1/2 teaspoon sea salt and 1/4 pepper. Place into a heavy roasting pan. Meantime, rub head of garlic with 1/4 teaspoon olive oil, wrap in aluminum foil and roast in the oven for about 1 hour until very soft. Let cool. Cut off the head of the garlic and squeeze cloves into a bowl. Use a fork to mash garlic into a paste. Add the remaining olive oil, lemon juice, lemon zest, oregano, parsley, thyme leaves and remaining salt and pepper. Mix well and place to the side. Place lamb into the oven and roast for approximately 1 1/4 hours. Rotate pan and roast another 30 minutes. Remove lamb and slather it with the roasted garlic and herb mixture and place back into the oven to roast another hour or until thermometer inserted at the thickest part reads 160 degrees for medium and 170 degrees for well done. Remove from oven and let rest for 20 minutes. Transfer lamb to cuttting board and cover with foil. Pour off fat from the roasting pan and place on medium heat. Sprinkle in flour and stir with wood spoon. Pour in chardonnay to deglaze pan, scraping up the brown bits, reduce liquid to 1/2 and then add the chicken broth, stirring to combine. Add rosemary and salt and pepper to taste. Slice the lamb and serve with the gravy to the side.

Minty Spring Pea and Ramp Salad
Serves 4

Ingredients
1 bunch ramps
2 pounds fresh or frozen baby peas
3 tablespoons olive oil
1 tablespoon champagne vinegar
1 tablespoon fresh mint, chopped
fine sea salt and fresh ground black pepper

Directions
Trim roots from ramps; finely chop white bulbs. Slice green leaves into 1/4-inch strips. Blanche peas by adding into a pot of boiling water for 1 minute, strain and place into a bowl of ice water to stop cooking. Once cooled, strain peas and place into a bowl. Heat 2 tablespoons olive oil in a large pan over medium heat. Add white part of ramps and cook 1 minute. Add ramp greens and saute until greens are slightly wilted about another minute. Remove from heat and add to peas. Stir in remaining olive oil, vinegar, salt and pepper to taste. Add mint and toss. Serve immediately or at room temperature.

Lemon Pound Cake

Ingredient

1/2 pound butter , at room temperature
3 cups cake flour
3 teaspoons baking powder
1 teaspoon salt
2 cups granulated sugar
5 egga, at room temperature
1 cup whole milk
1 tablespoon fresh lemon juice
zest of one lemon
Directions

Preheat oven to 350 degrees F. In a bowl sift together flour, baking powder and salt. Grease and flour one 10 inch tube pan. In the bowl of an electric mixer cream together the butter and sugar until light and fluffy. Gradually beat in the eggs yolks, lemon juice and zest scraping down the sides of the bowl. In a separate bowl, beat the whites until fluffy, continue beating until stiff peaks form. Gently fold some of the flour mixture into the yolk mixture, then some of the whites, and continue alternating this way until you have a well-combined, smooth, fluffy batter. Pour the batter into the tube pan. Make sure to avoid air pockets. Place on baking sheet in the oven for 55 to 60 minutes, until a tester comes out clean. Remove and cool for 10 minutes then invert on rack to finish cooling. Once cool remove from pan and place on tray and serve.

Guacamole
Serves 4

Ingredients
3 Haas avocados, ripe
3 tablespoons lime juice
1/4 cup scallions, chopped
1/4 cup cilantro, chopped
1 teaspoon sea salt

Directions
In a medium bowl add the lime juice and sea salt , let the salt dissolve. Cut and remove flesh from avocado and place into bowl with lime juice /salt along with scallions and mash with fork. Add ingredients listed below depending on the version you are making and mix well. Keep refrigerated until ready to serve.

Jalapeno Burger

Serves 4

Ingredients

1 1/2 pounds ground beef chuck ( each pattie 6 ounces)
4 ciabatta rolls
8 slices bacon
4 slices colby cheddar cheese
1/2 cup mayonnaise
3 tablespoons jalapeno rings, coarsely chopped
Directions

In a food processor add mayonnaise and jalapeno. Process until well blended. Refrigerate until ready to use. Make 4 patties from the ground beef, shaping into ovals. In a medium sauce pan, fry bacon until crispy, place on paper towel to drain. Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Season one side of patties with salt and pepper; place on grill, seasoned side down. Grill until lightly charred on bottom, about 4 minutes. Season other side, turn, and top with cheese. Grill to desired doneness, about 4 minutes longer for medium. Transfer burgers to dish and let stand for 3 minutes before serving. Meanwhile, toast buns on grill on until the edges start to brown. Remove bottoms of each bun and add cheese to tops to melt. To assemble burger take toasted bottoms, spread jalapeno mayonnaise on each bottom. Add the burger, the bacon and then top with bun with melted cheese. Serve immediately.

Bloody Mary Mix with Candied Bacon

Makes approximately 32 ounces of mix

Ingredients

1 (25-ounce) jar tomato passata, preferably San Marzano or best quality tomato juice
3 tablespoons freshly grated horseradish or best quality prepared grated horseradish
1/2 cup fresh lemon juice from 4 to 5 lemons
3 celery stalks, cut into 1 inch pieces
1/2 cup water
1 tablespoon white vinegar
1 teaspoon balsamic vinegar
1 teaspoon fine grey sea salt
1 teaspoon celery salt
1 1/2 teaspoons fresh ground black pepper
1/8 teaspoon cayenne pepper
8 slices bacon, 1/4 inch thick, best quality
1/4 cup dark brown sugar
Directions
Place tomato passata in a bowl. In a food processor add the celery and 1/4 cup water and blend. Strain liquid into a cup. You should have about 1/4 cup liquid. Discard the solids and add the celery infused water to the tomatoes. To the tomato base add horseradish, lemon juice, remaining 1/4 cup water, vinegars, salt, 1/2 teaspoon black pepper and cayenne. Refrigerate until ready to use. About an hour before serving preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Place bacon, brown sugar and 1 teaspoon black pepper in a bowl. Mix well. Place slices bacon flat onto the parchment paper. Sprinkle any remaining sugar on the bacon. Cover bacon with a second sheet of parchment. Place a second baking sheet on top of the parchment. This will keep the bacon flat while cooking. Place in the oven and bake for 20 minutes, remove top baking sheet and parchment paper and let continue to bake another 10 minutes or until crispy and a dark brown color. Remove from oven and place on rack to cool immediately.

BLOG HOT WINGS

CRISPY BAKED HOT CHICKEN WING RECIPE
Adapted from Bon Appetit Test Kitchen

INGREDIENTS
HONEY BUFFALO SAUCE
1 tablespoon unsalted butter, melted
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
1/4 cup hot pepper sauce
1/4 cup honey
WINGS
3 pounds chicken wings, tips removed, drumettes and flats separated
1 tablespoons vegetable oil
1 1/2 teaspoons fine sea salt
1/2 teaspoon freshly ground black pepper

DIRECTIONS
Preheat oven to 400°. Set a non stick wire rack inside each of 1 large rimmed baking sheet lined with foil. Place all ingredients in a large bowl; toss to coat. Place wings on the prepared rack and spread out in a single layer. Bake wings until cooked through and skin is crispy, 45–50 minutes. Remove wings from oven place in bowl, pour sauce on top toss and place back in the oven. Bake for 10 minutes until it starts to brown. Serve immediately.

Orange Cranberry and Dark Chocolate Chip Cookies
Makes 2 1/2 Dozen cookies

Ingredients
1 cup all purpose flour, plus two tablespoons
1/2 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons unsalted butter, softened
1/2 cup dark brown sugar
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1 egg
6 ounces bittersweet chocolate, chopped
1 teaspoon orange zest
1 teaspoon orange juice
1/2 cup dried cranberries

Directions
Preheat over to 375 degrees F. In a large bowl add the butter, sugars and vanilla. Use an electric mixer and beat ingredients until light and fluffy. Add the egg , orange rind and juice and beat in well. In another bowl, sift together the flour, baking soda and salt. Add to the butter mixture slowly and mix at a low speed. Next add the chopped chocolate and dried cranberries and combine. Drop in rounded teaspoons of dough onto ungreased baking sheets. Bake for 9 to 10 minutes, until slightly brown on bottom. Remove and cool on wire racks. Store in air tight containers.

Mushroom Quinoa Risotto

This is a delicious, healthy and very easy dish to make. Such an infrequent grouping of adjectives. I love making my quinoa risotto , especially during the week when I’m looking to prepare something quickly after a long day at the office but not willing to compromise on the flavor. This mushroom quinoa risotto really delivers. This starts with a base of sweet leeks which is layered with an assortment of wild mushrooms and then quinoa. Red chili flakes add the right under note of heat and parmesan the proper balance of saltiness. The result is a dish that rivals the best risotto. Even better than risotto is that warmed leftovers are just as good the next time!

Mushroom Quinoa Risotto

Serves 4

Ingredients

2 cups quinoa, rinsed

2 tablespoons olive oil

2 tablespoons unsalted butter

1 8-ounce package sliced crimini (baby bella) mushrooms

6 ounces fresh assorted mushrooms, stemmed, sliced

1 1/2 cups thinly sliced leeks, cleaned well

1/4 teaspoon red chili flakes

1 teaspoon fine sea salt

1/4 teaspoon fresh ground black pepper

3 teaspoons chopped fresh thyme, divided

2 to 3 cups chicken stock

1/2 cup dry white marsala wine

Directions

Put the butter and oil in a large, deep skillet or saucepan over medium heat. When it is hot, add the fresh mushrooms, and cook, stirring occasionally, until the mushrooms begin to brown, about 5 minutes. Add the leeks and cook until they soften slightly, about 2 minutes.
Add the quinoa, and cook, stirring occasionally, until it’s glossy and coated with butter and oil. Sprinkle with chili flakes, thyme, salt and pepper, and then add the  parmesan rind, broth and wine. Continue to cook, stirring frequently and adding stock as necessary; the mixture should be neither soupy nor dry. Begin tasting the quinoa about 20 minutes after you added it; you want it to be tender but not mushy and to have released some of its starch. Once it reaches that stage, after about 25 minutes, remove the rind and stir in some grated parmesan cheese, along with a little more butter or oil if you like. Stir until the cheeses melt; taste and adjust the seasoning, and serve.

Brussel Sprout Salad with Walnuts, Dried Cranberries and Parmesan Cheese

Moving past Thanksgiving weekend, here is a wonderful brussel sprout salad to enjoy! Not only is it healthy, it’s a feast for the eyes. You can make it a light main course, or serve through out the season as a perfect holiday side for dinners and parties. It’s easy to make especially if you have a food processor. It’s definitely a crowd pleaser for parties and it’s one of those dishes you can prepare in advance , and it tastes better as the brussel sprouts marinate in the dressing. Add it to one of your holiday menus this season!

Brussel Sprout Salad with Walnuts, Dried Cranberries and Parmesan Cheese

Serves 4
Ingredients
1 pound brussel sprouts
1/4 cup olive oil
2 tablespoons lemon juice
1/4 cup walnuts, chopped
2 tablespoons dried cranberries
2 tablespoons coarsely grated parmesan cheese
fresh ground black pepper and fine sea salt to taste
Directions
Cut off the ends of the sprouts  and clean. Using a food processsor fitted with a slicing blade coarsely shred the brussel sprouts. Place into a large bowl.  Add the remaining ingredients. Toss gently. Add fine sea salt and fresh ground pepper to taste and serve.

Spiced Pomegranate Molasses Glazed Turkey
1 16-18 lb. turkey, preferably organic
Brine
16 cups cold water, or more to cover turkey
1 cup fine sea salt
1 cup light brown sugar
4 cloves garlic
3 oranges
2 tablespoon black peppercorns
2 onions , peeled and quartered
3 sprigs rosemary
To roast turkey
2 oranges, cut in half
1 pomegranate cut in half
1 bunch rosemary
2 tablespoons fine grey sea salt
1 tablespoon ground black pepper
To baste
8 tablespoon unsalted butter at room temperature
¼ cup pomegranate molasses
1 tablespoon Dijon mustard
Directions
Prepare brine by combining water, sea salt, sugar and peppercorns. Stir to dissolve the salt and sugar. Then add to the brine the garlic, oranges, onions and rosemary. Clean turkey with cold water removing any giblets and or neck. Keep giblets and neck in the refrigerator to use later for gravy base. Place turkey and brine into a resealable plastic bag or into a large non reactive bowl covered with plastic wrap. The turkey should be covered with the brine, if not add more water. Refrigerate over night. The next day remove the turkey 40 minutes before planning to place into the oven. Preheat oven to 425F. Remove turkey from brine and pat dry with paper towels inside and out. Season the turkey cavity with salt and pepper. Fill the cavity of the turkey with the oranges, pomegranate and rosemary. Tie turkey legs together and place into roasting pan. In a small sauce pan melt butter, mustard and pomegranate molasses together on a low heat. Use this to baste turkey once before placing into the oven. Roast the turkey at 425F for 30 minutes then lower the oven to 350F. For an 18lb turkey cooking time will be approximately 3 hours. Use a meat thermometer to check that the meat registers 175F at its thickest part of the thigh. Baste the turkey about every 30 minutes with the butter and syrup mixture. If the turkey browns too quickly tent that part with aluminum foil. When ready remove from the oven. Take turkey from the roasting pan and place on a cutting board to rest before carving, at least 20 minutes. If you are serving later then 20 minutes from removing from oven tent turkey with aluminum foil until ready to serve.
