Blackberry Barbecue Sauce

Memorial Day is right around the corner. How I look forward to many meals centered around grilling!  I love to make my own barbecue sauce mixing my favorite flavors, finding that right balance between sweet, savory and heat. This sauce is so simple to make combining many ingredients  you would have in your kitchen except maybe for the blackberry jam, which you will love to have anyway whether its for this recipe or your morning toast and the haberno chile. If you can’t find a haberno, jalapeno would work fine too. I love this sauce on spare ribs, pork chops and chicken. Let the season begin with this sauce!

Blackberry Barbecue Sauce
Makes 1 cup

Ingredients

  • 1 cup ketchup
  • 2 tablespoons unseasoned rice vinegar
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons dark brown sugar
  • 4 tablespoons seedless blackberry preserves
  • 1 teaspoon minced habanero chile
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon granulated sugar
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon dry mustard powder
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon cayenne

Directions
Place all the ingredients into a saucepan and mix well.  Simmer over a low heat for about 20 minutes, stirring occasionally until the sauce is slightly thicken. Use it immediately or place in a glass container and keep it in the refrigerator for up to a week.

Quick and Easy Blackberry Jam

Wait don’t throw out those berries!  Sometimes, I have left over berries in my fridge, yes hard to imagine but true. If you find that you have berries that are maybe not at peak left over , consider making this quick berry jam recipe. I used blackberries because  they were what I had left over but easily you could be using raspberries, blueberries or strawberries. I have been know to just use whatever I might have left over. It’s so simple to make the green apple supplies the pectin to make the jam and voila you have your very own homemade fridge jam. Serve along with your favorite biscuit, toast or pancakes!

Quick and Easy Blackberry Jam

Ingredients

  • 12 ounces fresh blackberries
  • 1 cup granulated sugar
  • 1/4 cup cored, peeled and chopped granny smith apple
  • 1 tablespoon fresh lemon juice

Directions

Wash blackberries and pick over for any impurities. Place ingredients in a medium pan on low heat and mix well. Heat slowly for approximately 40 minutes stirring occasionally, until jam comes to a rolling boil. Test to see if jam has thickened by using a spoon to see that it doesn’t run. You can mash the berries or leave the larger pieces. If it’s a little runny no worries it will jell in the fridge. Place in a jam jar and cover. Store in the refrigerator until ready for use for up to one week.

Blackberry Corn and Jalapeno Salad

This simple and delicious corn salad combines great flavors of the season : corn, blackberries, jalapeno peppers and basil. Fresh lime juice brightens the flavors. It’a a refreshing and colorful side dish , that works with most grilled entrees.

Blackberry Corn and Jalapeno Salad

Serves 4

Ingredients

  • 5 ears of corn, shucked
  • 1/2 red onion, sliced
  • 3 tablespoons fresh lime juice ( 2-3 limes)
  • 3 tablespoons olive oil
  • 1/2 jalapeno, seeded and thinly sliced in half rings
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon fresh ground pepper to taste
  • 6 ounces fresh blackberries
  • 3 tablespoons torn fresh mint leaves

Directions

In a large pot of salted water boiling water add corn for 3 minutes. Drain and immerse in ice water to stop cooking. cool corn down with water. While corn is cooling, place red onion in lime juice and let sit for 10 to 15 minutes to soften. When corn is cool, cut the kernels off the cob. Place kernels in a large bowl, along with the olive oil, red onions with lime juice and jalapeno. Toss well. Add salt and pepper to taste and toss again. Just before serving add the blackerries and mint and gently toss.

 

 

 

Blackberry Buttermilk Coffee Cake

I grew up in New York City. My back yard was the hard gray pavement. Most of my childhood games were played on the sidewalk, games such as hopscotch, jump rope and stick ball. Every summer though my family would go on vacation and we would spend two glorious weeks away from the city. We would drive up to the Adirondack Mountains and stay at a cabin on Loon Lake. Much like Dorothy, my world went from Black and White to Technicolor. The cabin was in a wooded area just a short walk from the lake. The surrounding woods were filled with little paths to other cabins. Every afternoon I would take a long walks along the paths.  The woods were filled with blackberries, raspberries and blueberries. I would fill my pail each afternoon and return to the cabin. Many days I would return from my walk and my sisters and I would just eat the berries straight from the pail, too impatient to make them into a dessert. But on those few days that we controlled our impulses to eat those berries immediately we would stand at mom’s side and make a dessert.  We kept our desserts pretty simple: pies, cobblers and crisps. The blackberries almost never lasted until the morning so I bought enough recently so that I could make this delicious coffee cake, it’s moist and slightly sweet bursting with blackberries. Even better is how easy it is to make. Picking and cooking with blackberries were some of the happiest and most delicious moments of my life.

Blackberry Buttermilk Coffee Cake
Ingredients
1 1/2 cups all purpose white flour
2 teaspoons baking powder
1 teaspoon salt
1/3 cup canola oil
1/2 cup granulated white sugar
1 egg
2/3 cup buttermilk
5 ounces fresh blackberries
For crumb topping
1/3 cup all purpose white flour
3 tablespoons granulated white sugar
3 tablespoons dark brown sugar
1/2 teaspoon cinnamon powder
1/4 cup cold butter, cut into pieces ( 1/2 stick)
Directions
Preheat oven to 375 degrees F. Grease a non stick 8″ square baking pan and cover bottom with a square piece of parchment paper. In a small bowl add the flour, baking powder and salt and mix. In a medium size bowl add the oil, sugar and egg. Beat using a spoon until well combined. Slowly add the flour and buttermilk alternately, blending well after each addition. Turn batter into the greased pan. Top with the blackberries. In another bowl add the ingredients for the crumb topping and mix well using your fingers until butter is incorporated and texture is crumbly like sand. Sprinkle evenly on top of the batter. Place pan on a baking sheet and bake for 40 to 45 minutes, until a tester comes out clean. When cake comes out of the oven let cool 5 minutes and then loosen the sides with a knife . Let cool another 5 minutes and turn onto a wire rack. Remove the parchment paper and let cool another 10 minutes. Place on a serving plate . This is great to serve warm or at room temperature.
