Cold Cucumber and Buttermilk Soup

Cool and refreshing, this simple cold soup uses only four ingredients. Don’t let the simplicity deceive your perception of this recipe, the taste is delicious!  This is definitely one of my favorite soups to enjoy over and over again this summer. I use whatever cucumbers I have around and it’s especially a good way to use cucumbers that are a few days old and not at peak.

Cold Cucumber and Buttermilk Soup

Serves 4

Ingredients

  • 1 pound cucumbers, peeled, halved and seeded
  • 2 teaspoons jalapeno pepper, seeded and chopped
  • 2 cups buttermilk ( whole if available)
  • 2 teaspoons fine sea salt
  • optional: diced cucumber to garnish and coarse sea salt such as Maldon

Directions

Coarsely chop the cucumbers. Place cucumber along with the remaining ingredients in a food processor. Blend until smooth, about 1 minute. Place in a container and refrigerate for 2 to 3 hours before serving.  To serve, garnish with diced cucumber and a little coarse sea salt.

Dark Chocolate Bark with Pomergranate and Sea Salt

Adapted from Ina Garten’s White Chocolate Bark from “Barefoot Contessa How Easy is That?” published 2010

Ingredients

16 ounces very good dark chocolate, finely chopped
1/2 cup dried pomegranate arils or dried cranberries
1 teaspoon coarse sea salt ( or more to taste), such as Maldon

Directions

Place 3/4 of the chocolate in a microwave safe glass bowl. Place in microwave for 30 seconds, remove and stir with a rubber spatula. Repeat in 30 second intervals stirring in between each until chocolate is melted. Add remaining chocolate and stir until it melts. You may need to place back in microwave for another 10 seconds or so to melt the remaining chocolate.

Meanwhile, line a sheet pan with parchment paper. Using a ruler and a pencil, draw a 9 by 10-inch rectangle on the paper. Turn the paper facedown on the baking sheet.

Pour the melted chocolate over the paper and spread to form a rectangle, using the outline. Sprinkle the cashews, apricots and cranberries over the chocolate. Set aside for 2 hours until firm. Cut the bark in 1 by 3-inch pieces and serve at room temperature.

 

Double Chocolate Rice Krispies Cookies

This is a delicious cookie – crispy on the outside, softer on the inside with a double dose of chocolate using good quality cocoa powder and chocolate chips and then two surprise ingredients. The first twist is using rice krispies which gives the cookie a light crunchy texture and then I top the cookie with coarse sea salt. I love to use Maldon sea salt. It gives a lovely subtle salty balance to the double chocolate sweetness. This sweet and salty cookie is definitely a wow!

Double Chocolate Rice Krispies Cookies

Makes 24 to 30 cookies

Ingredients

1/2 cup (1 stick) unsalted butter, at room temperature

1 cup granulated sugar

1 large egg

1 teaspoon pure vanilla extract

1 1/2 cups all-purpose flour

1/3 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

6 ounces semi sweet chocolate chips

3/4 cup rice krispies

coarse sea salt, for topping (optional)

Directions

Place racks in the center and upper third of the oven and preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.

In the bowl of an electric stand mixer fitted with a paddle attachment, cream together butter and sugar until light and fluffy, about 3 to 5 minutes. Scrape down the sides of the bowl and add the egg and vanilla extract. Beat for 1 minute more.

In a medium bowl shiftt together flour, cocoa powder, baking powder, baking soda, and salt. Add the dry ingredients all at once to the butter and egg mixture. Beat on low speed until just combined.

Stop the mixer and stir in the chocolate chips and rice krispies.

Roll dough by the heaping tablespoonful. Place on cookie sheet, leaving about 2-inches between each dough ball.

Bake for 12 to 15 minutes or until cookies are just done. the cookie will set while cooling.   Allow to rest on the baking sheet for 5 minutes before removing to a wire rack to cool before storing. Eat within the week.
