Pumpkin Scones with Cinnamon Butter

Autumn by the bay, the leaves are turning colors and there is a gently rain of large maple leaves softly floating down to the ground. As Halloween approaches and pumpkins are everywhere it is time to start baking and cooking with pumpkin. This year I wanted to make pumpkin scones. I looked at many recipes, before I decided on the recipe below. Let me just start with that this scone is perhaps one of the best if not the best scone I have ever tasted. Yes, I absolutely mean that!  The scones are light and airy not too sweet and a subtle taste of tart from using fresh cranberries over sweet dried cranberries. I loved the technique of grating the cold butter into the dry ingredients and plan to experiment more with this technique since the results were so wonderful. This recipe is really easily , just a few extra steps but the results are worth it. Save some time in the morning, by measuring all your dry ingredients in advance and leave in a zip lock bag until you are ready to bake.

Pumpkin Scones with Cinnamon Butter

Recipe by Beauty and Essex as featured in Bon Appetit November 2014

Cinnamon Butter
¼ cup (½ stick) unsalted butter, room temperature
1 teaspoon pure maple syrup
¾ teaspoon ground cinnamon
¼ teaspoon kosher salt
Scones
½ cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground ginger
½ teaspoon freshly grated nutmeg
½ teaspoon ground cinnamon
½ teaspoon kosher salt or fine sea salt
¼ teaspoon ground cloves
¼ teaspoon baking soda
2 cups all-purpose flour, plus more for surface
¾ cup (1½ sticks) chilled unsalted butter
½ cup chopped fresh (or frozen, thawed) cranberries
1 large egg
½ cup canned pure pumpkin
¼ cup buttermilk, plus more for brushing
2 tablespoons raw sugar

Preparation
Cinnamon Butter
Mix butter, maple syrup, cinnamon, and salt in a small bowl.
Do Ahead: Cinnamon butter can be made 4 days ahead. Cover and chill.
Scones
Whisk granulated sugar, baking powder, ginger, nutmeg, cinnamon, salt, cloves, baking soda, and 2 cups flour in a large bowl. Using the large holes on a box grater, grate in butter, tossing to coat in dry ingredients as you go; toss in cranberries. Mix in egg, pumpkin, and ¼ cup buttermilk.
Transfer dough to a lightly floured surface and pat into a 1½”-thick disk. Cut into 8 wedges; transfer to a parchment-lined baking sheet. Freeze until firm, 25–30 minutes.
Preheat oven to 400°. Brush scones with buttermilk and sprinkle with raw sugar. Bake until golden brown, 25–30 minutes. Serve with cinnamon butter.

 

Pumpkin Layer Cake with Cream Cheese Buttercream Frosting and Caramel Filling

Here is the ultimate pumpkin cake! It’s the cake that will make your holiday unforgettable! It’s a delicious, decadent , over the top dessert! Spicy pumpkin cake in four layers, caramel layered between the cake, then topped with a cream cheese buttercream frosting.  On top of the cake are shards of pepita ( pumpkin seed) brittle. The cake stays moist so you can make it a day in advance and keep covered in the refrigerator. It’s sublime!

Cake
Butter for coating cake pans, at room temperature
3 cups all purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon ground cardamom
1 15-ounce can pure pumpkin
1 1/2 cups sugar
1 1/4 cups vegetable oil
4 large eggs
2 teaspoons finely grated orange peel

Cream Cheese Frosting
2 packages (8 ounces each) cream cheese, at room temperature
1 cup (2 sticks) unsalted butter, at room temperature
2 tablespoons canned unsweetened pumpkin purée
1 1/2 cups confectioners’ sugar, sifted
1 teaspoon pure vanilla extract

Caramel Filling

  • 1 cup dark brown sugar
  • 8 tablespoons unsalted butter
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 2 1/4 cups confectioner’s sugar or until thick enough to spread

Directions for the cake

Position a rack in the center of the oven and preheat to 350°F. Butter two 9-inch diameter cake pans with 1 1/2-inch sides. Line the bottom of each pan with a circle of parchment paper. Butter the parchment paper. Sprinkle the pans with flour, tap the pans to evenly distribute the flour, and then shake off the excess flour. Set aside.
To make the cake, in a large bowl, sift together the 2 cups flour, the granulated sugar, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, cardamom and allspice. In a electric mixer using the paddle attachment combine the pumpkin, sugar and oil. Add eggs one at a time. Mix in orange zest. On low speed add the flour mixture to the flour mixture until just combined. Divide the batter between the prepared pans, spreading it evenly. Bake for 35 to 40 minutes until a tester inserted into the center of a cake comes out clean. Transfer to wire racks and let cool in the pans for 15 minutes. Run a table knife around the edge of the pans to loosen the cakes. Invert the cakes onto the racks and peel off the parchment paper. Let cool completely before frosting the cakes.

Directions for the cream cheese buttercream frosting
To make the frosting, in the bowl of an electric mixer fitted with the paddle attachment, beat the cream cheese on medium speed for about 3 minutes until smooth. Add the butter and beat for about 2 minutes until combined. Add the pumpkin purée and beat until incorporated, about 1 minute. Add the confectioners’ sugar and vanilla and beat for about 3 minutes until fluffy.
Place 1 cake layer on a cake plate or platter. Using an offset spatula, spread half of the frosting over the top of the first cake layer. Spread the frosting right to the edge of the top without frosting the sides of the cake. Carefully place the second cake on top, lining up the edges. Spread the remaining frosting over the top of the cake without frosting the sides. Swirl the frosting to decorate the top. Refrigerate the cake to set the frosting. Remove from the refrigerator 30 to 40 minutes before serving.

Directions for caramel filling

In a medium sauce pan add brown sugar and butter and cook for two minutes on medium heat, melting butter. Add mild and bring to a boil. Take off heat add vanilla, mix and cool. Once cool whisk confectioner’s sugar until good consistency to spread and smooth. Add more sugar until thickened if needed.

To assemble cake :

Cut each cooled layer of pumpkin cake in half with a serrated knife. Place first layer on cake stand and using an offset spatula spread on top of cake. Spread the frosting right to the edge of the top without frosting the sides of the cake. Carefully place the second cake on top, lining up the edges.Repeat with the remaining 3 layers.

Spread  cream cheese buttercream frosting over the top of the cake and sides. Swirl the frosting to decorate the top. Refrigerate the cake to set the frosting. Remove from the refrigerator 30 to 40 minutes before serving.Spread the top and then sides with the cream cheese buttercream frosting. Keep in the fridge until ready to serve. Let come to room temperature.

Pepita Brittle

Adapted from “Craft of Cooking” by Tom Colicchio and Smitten Kitchen Blog from 11/1/2008

Makes one 12 x 16 – inch pan


Canola -oil spray

2 cups sugar

1/4 pound unsalted butter

6 tablespoons corn syrup

1/2 teaspoon baking soda

3/4 pound  or 1 1/2 cup shelled raw unroasted pepitas ( pumpkin seeds)

1 1/2 tablespoons Maldon sea salt 

Directions

Line a rimmed baking sheet with parchment paper. Spray parchment paper with Canola oil. Take a large non-stick pot and add sugar, butter, corn syrup and 1 1/3 cups water. Place on high heat melting sugar until the caramel turns amber color, stir occasionally as this is cooking. This might take awhile, it will thicken as it boils before it finally turns amber. At this point add the baking soda and salt, then remove from heat and add the pepitas. Stirring well, then quickly pour onto the baking sheet and spread out evening with a spatula. An alternate method for a smoother brittle is slide the parchment paper out of the baking pan and onto a smooth counter top. Cover with another sheet of parchment paper and use a rolling in, to smooth the brittle and roll it out thin. Once the brittle is rolled out you can remove the top sheet of parchment paper and  let the brittle cool and then break into pieces. If you can resist eating this , store in an air tight container.

Pumpkin Spice Sugar Donut Muffins

It’s fall and it’s seems like there is pumpkin spice all around us……..there is a reason, pumpkin spice smells and tastes delicious, but use it where it’s makes a difference. There is no finer place than sugar donut muffins! These light as air muffins are a perfect fall morning breakfast. I’ve updated the recipes for the season using my own pumpkin spice blend. This sugared blend is also perfect for your morning coffee. Enjoy!

Pumpkin Spice Sugar Donut Muffins
Adapted recipe from Downtown Bakery and Creamery in Healdsburg, California
12 standard size muffins
Ingredients for batter
12 tablespoons unsalted butter, softened at room temperature
3/4 cup fine granulated sugar
2 eggs
3 cups all purpose flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon nutmeg
3/4 cup milk
1/4 cup buttermilk
Ingredients for Topping
6 tablespoons melted butter
1 cup sugar
4 teaspoons pumpkin spice mix ( see my pumpkin spice mix recipe below)
Preheat oven to 350 Degree F. Lightly grease a standard muffin tin. Sift together in a bowl the flour, baking powder, baking soda, salt and nutmeg. Set aside. Using an electric mixer cream butter and sugar together until fluffy. Add one egg at a time, beating to combine. Using a wooden spoon to mix, alternate adding the flour mixture with the milk and buttermilk. Make sure everything is combined, try not to over mix. Spoon the batter evenly, into each muffin tin, filling the cup almost to the top. Bake muffins in the oven for 25 to 30 minutes, until a tester comes out clean. Let cool slightly, and remove muffins from the tin. In a bowl mix the sugar and pumpkin spice mix together. Use a pastry brush to brush each muffin allover with the melted butter and then roll into the pumpkin spice sugar mixture. Serve warm or cooled at room temperature.

Pumpkin Spice Mix

Ingredients

2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice

Directions

Mix spices together .

Pumpkin Corn Bisque

This week is unique in that the first half of the week is summer and the second half is fall. The local farm stands look the same way, one side is the last corn of the summer and on the other side you the start of fall, filled with pumpkins and winter squash. This soup does the same thing by mixing the flavors of summer corn and fall pumpkin. It’s a perfect combination that you can celebrate this time of year.

Pumpkin Corn Bisque

Serves 4

Ingredients

2 tablespoons unsalted butter
3 cups fresh corn kernels ( approx. three ears), or thawed frozen corn
1 small chopped onion
1(15-oz.) can organic pumpkin puree
2 cups unsalted chicken broth
1/2 teaspoon coriander
1/2 teaspoon fine sea salt
1/4 teaspoon nutmeg
1/4 teaspoon fresh ground black pepper
1 cup half and half

Optional : pinch of cayenne along with other spices

Optional : garnish shelled, roasted and salted pumpkin seeds, chopped chives

Directions

In a dutch oven or stock pot  melt butter, add onions and saute until softened, add corn and saute another minute. Add remaining ingredients, except the half and half.  ( include the cayenne).  Bring to a boil, then reduce heat and simmer for about 20 minutes. Let cool, then puree in a food processor. This can be made head and refrigerate.  When ready to serve heat, once heated add half and half. Stir and serve. Garnish with pumpkin seeds and chopped chives.

 

Pumpkin Cider Bread

Here is another great treat made not only with pumpkin but also apple cider for the perfect autumn food pairing. This easy pumpkin bread taste perfect just as it is moist and spicy or kick the taste up another notch by slathering some cider cream cheese frosting on top. It’s wickedly good!

Pumpkin Cider Bread 

Makes 1 Loaf or 4 mini loaves

Adapted from Gourmet October 1991

Ingredients

  • 1 cup apple cider
  • 1 cup canned pumpkin purée
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 3/4 cup firmly packed light brown sugar
  • 2 cups all-purpose flour
  • 2 teaspoons double-acting baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup raisins

Directions

In a saucepan boil the cider until it is reduced to about 1/4 cup, add raisins and let it cool. In a bowl whisk together well the pumpkin purée, the eggs, the oil, the brown sugar, and the reduced cider. Into the bowl sift together the flour, baking powder, salt, baking soda, cinnamon, ginger, allspice, nutmeg and cloves and stir the batter until it is just combined. Transfer the batter to a well-buttered 8 1/2-by 4 1/2-inch loaf pan and bake the bread in the middle of a preheated 350°F. oven for 1 hour, or until a tester comes out clean. Let the bread cool in the pan.

Cider Cream Cheese Icing

For the icing
1/2 cup apple cider
6 ounces cream cheese, cut into bits and softened
1/2 cup sifted confectioners’ sugar

Make the icing:
In a saucepan boil the cider until it is reduced to about 1/4 cup and let it cool. In a bowl with an electric mixer beat together the cream cheese, the confectioners’ sugar, the reduced cider, and a pinch of salt until the icing is smooth.

Pumpkin Coffee Cake with Brown Sugar Streusel
Serves 6-8
Ingredients

Streusel Topping

3/4 cup all purpose flour
1/4 cup
granulated sugar

1/2 cup dark brown sugar
1/2 cup chopped walnuts

2 teaspoons cinnamon powder
1/4 teaspoon fine sea salt

6 tablespoons melted unsalted butter

Filling
1/2 cup dark brown sugar
2 teaspoons cinnamon

Cake

8 tablespoons unsalted butter, room temperature

1/2 cup dark brown sugar

1/2 cup granulated sugar

2 eggs
1/2 cup pumpkin puree ( canned)
1/2 cup sour cream
1 1/2 cups all purpose flour
2 teaspoons baking powder

2 teaspoons cinnamon powder
1 teaspoon ground ginger
1/4 teaspoon grated nutmeg

Directions

Preheat oven to 350 degrees F. Butter and flour an 8” square baking pan. ( I find an 8″ square glass baking dish works best). Make the topping for cake by combining all dry ingredients in a bowl. Stir in melted butter and make large chunky crumbs, between 1/4″ to 1/2″ inch depending on preference. Place crumbs onto a parchment lined baking sheet and put into the refrigerator to cool for about 15 minutes. To make filling combine the dark brown sugar and cinnamon in a bowl and set aside.To make cake batter sift together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and salt in a bowl. Use an electric mixer to cream butter and sugars together until fluffy. Add eggs one at a time and beat well. Mix in the flour alternately with the sour cream and pumpkin puree and mix well. Once combined pour half the batter into the prepared baking pan and spread out with a spatula. Sprinkle the filling evenly atop the batter. Spread the remaining batter on top of the filling. Use a table knife to gently swirl the filling into the batter. Sprinkle the streusel topping over the top of the batter. Place in the oven to bake until golden brown and a cake tester comes out clean, when inserted into the center of the cake. This is approximately 50 to 55 minutes. Remove the cake from oven and let cool on cake stand about 20 minutes before removing from pan to serve.

Pumpkin Cream Cheese Muffins

Makes 12 muffins

Ingredients

For Filling
4 ounces cream cheese
1/4 cup confectioners sugar
1/4 teaspoons vanilla
For Muffins

3/4 teaspoon ground nutmeg

1/4 teaspoon ground allspice

1 cup pumpkin puree
3/4 cup vegetable oil
2 eggs
roasted and salted pumpkin seeds (pepitas) to garnish top of muffins
Directions
In a small bowl mix the cream cheese, confectioner’s sugar and vanilla together. Place on a piece of plastic wrap and shape into a log. Place in the freezer for at least one hour. Preheat oven to 375 degrees F. Use a 12 cup muffin tray and line each cup with a paper baking cup, preferably unbleached. In a medium size bowl add the ingredients for the batter except the pumpkin seeds. Mix well. Fill each cup about 3/4 full. Remove the cream cheese from the freezer and cut into 12 rounds or pieces about 2 teaspoons each. Place the cream cheese into the batter, it should be level with the batter and showing the cream cheese in the center. Top each muffin with 5 ot 6 pumpkin seeds. Place in the oven and bake for 20 to 25 minutes until a tester
comes our clean from the batter part of the muffin, don’t use the tester in the cream cheese. Remove from oven and let cool 5 minutes before removing from the muffin tray. Serve warm, cold or at room temperature.

Pumpkin Muffins

Makes 12 muffins

Muffin batter

1 ¾ cup flour

¾ cup fine granulated sugar

½ cup dark brown sugar

2 teaspoons baking powder

½ teaspoon ground cinnamon

½ teaspoon ground allspice

¼ teaspoon ground ginger

2/3 cup sour cream

½ cup vegetable oil

1 tablespoon honey

2 eggs

½ cup pumpkin puree

Topping

1 tablespoon fine granulated sugar

½ teaspoons ground cinnamon

Directions
In a small bowl mix topping by combining sugar and cinnamon and set aside. In another bowl mix together dry ingredient s of sugar, flour, baking powder, cinnamon, allspice and ginger. Using another bowl combine sour cream, oil, honey, eggs and pumpkin puree. Whisk together. Add ingredients to the dry ingredients in the other bowl. Mix until incorporated, batter will be lumpy don’t over mix. Take a lined 12 muffin tin and fill each muffin tin to 2/3 with batter. Top the batter with cinnamon and sugar mixture. Bake in a preheated 400 degrees F oven for 20-22 minutes or until tester comes out clean. Remove from oven and cool on rack.

Looking for a pumpkin based treat to satisfy my inner child as well as fully embrace fall and the upcoming holiday – Halloween, I looked no further than my local Starbucks for inspiration. This is my take on one of their seasonal breakfast baked goods. I love the tangy cream cheese filling in contrast to the complex spice of the muffin.  The pumpkin seeds on top add just the right amount of texture and crunch. This is definitely one of my favorites! Make it one of yours and treat out this delicious seasonal treat!

Pumpkin Coffee Cake with Brown Sugar Streusel

If you read New York Magazine, you would have heard that pumpkin is the new bacon ( See link below). I’m not sure I would agree with that statement , however, I sure do love to cook with pumpkin this time of year. I can’t think of a better way to help celebrate Halloween than baking , especially with pumpkin! I was experimenting in the kitchen with some of my favorite ingredients to come up with this delicious and rich coffee cake. It has everything I like best in a good coffee cake, a wonderful streusel topping , with the added crunch of some walnuts. In my family we love the crumbs on top, so this recipe has plenty of crumbs and they are large and chunky when I toss them on top of the batter. The cake is moist from using both pumpkin puree and sour cream. To add to the richness is a nice layer of brown sugar filling. When baking the house is just filled with the delicious aroma of cinnamon and brown sugar. You’ll want to eat this the second it comes out of the oven, but it really needs to cool so that you can enjoy all the layers of flavor. Try to resist or you’ll just to have to eat some twice, warm and then cool as well. The trouble is this cake will just disappear……….probably the ghosts and ghouls have gotten to the cake !

Halloween Devil Food Cup Cakes with Cream Cheese Frosting

I love holidays! I love cooking for holidays, decorating for holidays and entertaining for holidays. I like to make every holiday possible, a little special event, especially with my cooking!  My niece tells me, I should make my house by the bay  like the house in  ” Holiday Inn”. This is a  classic movie with Bing Crosby and Fred Astaire. Bing Crosby’s character in the film , moves to Connecticut and buys a country inn. Bing turns the inn into a super club  open only on the holidays and is off the rest of the year. If I could make that work, believe me, I would do it. With my love of holidays out in the open, you can be sure that I will be blogging recipes before each holiday in order for you to celebrate. With Halloween arriving in few days here are two treats to make. Start the morning right with pumpkin muffins. With anticipation of the day ahead, get the holiday going with this tasty treat, the aroma in your home will be intoxicating. The next recipe is a devil foods  cupcake with cream cheese icing the kids and adults will love it. Trick or treat!

Pumpkin Muffins

Makes 12 muffins

 

Muffin batter

1 ¾ cup flour

¾ cup fine granulated sugar

½ cup dark brown sugar

2 teaspoons baking powder

½ teaspoon ground cinnamon

½ teaspoon ground allspice

¼ teaspoon ground ginger

2/3 cup sour cream

½ cup vegetable oil

1 tablespoon honey

2 eggs

½ cup pumpkin puree

Topping

1 tablespoon fine granulated sugar

½ teaspoons ground cinnamon

Directions

In a small bowl mix topping by combining sugar and cinnamon and set aside. In another bowl mix together dry ingredient s of sugar, flour, baking powder, cinnamon, allspice and ginger. Using another bowl combine sour cream, oil, honey, eggs and pumpkin puree. Whisk together. Add ingredients to the dry ingredients in the other bowl. Mix until incorporated, batter will be lumpy don’t over mix. Take a lined 12 muffin tin and fill each muffin tin to 2/3 with batter. Top the batter with cinnamon and sugar mixture. Bake in a preheated 400 degrees F oven for 20-22 minutes or until tester comes out clean.  Remove from oven and cool on rack.

Halloween Devil Food Cup Cakes with Cream Cheese Frosting

12 cupcakes

Chocolate Cupcakes

1/3 cup butter, softened

1 cup sugar

1 egg

2/3 cup buttermilk

1 teaspoon vanilla

2/3 teaspoon baking soda

2 cups flour

2 squares melted chocolate

Directions

Preheat oven to 350 degrees F. Use an electric mixer, cream butter and sugar together until fluffy. Add egg and mix well.  Add the dry ingredients alternating with buttermilk and vanilla and beat well. Melt chocolate squares in microwave, heat 30 seconds remove and stir with a spoon until melted. If chocolate is not completely melted repeat process.  Cool for 5 minutes and add into the batter combining well.  Place paper liners into a 12 muffin tin. Place batter into each cup until about 2/3 filled. Bake in oven for 25 minutes. Cool on wire rack. Keep in airtight container until ready to frost and eat.

Tip: If you don’t have buttermilk substitute 2/3 cup milk with one tablespoon of white vinegar and let sit for 5 minutes.

 Cream Cheese Frosting

1 cup confectionery sugar

4 ounces cream cheese, softened

1 teaspoon vanilla

Directions

Mix the above ingredients until smooth. Keep in air tight container in the refrigerator until ready to frost and eat the cupcakes. After you frost the cupcakes decorate with sprinkles, crush candy or chocolate cookies.
