Beef Short Rib Braised in Red Wine

Well, it was bound to happen. Temperatures just plunged here on the East Coast and when the wind whips across the bay, it is bone chilling! When the weather turns that cold, I find making a nice braise that spends a few hours in the oven the ultimate comfort food. I love making braises through out the winter and one of the most rewarding is this slow red wine braise for beef short ribs. Beef short ribs are one of the most delicious and flavorful cuts of meat. It takes some love and time to bring the best out of this cut in preparation.  First, the ribs are bathed in a brine for a few hours to  add flavor and keep the meat tender while it slowly braises in the oven in a bath of red wine and beef stock with some lovely herbs and vegetables. The final step is a splash of red wine vinegar to balance against the richness of the meat.  The result is a beautiful, complex marriage of flavors. I know this sounds a little theatrical but the results are show worthy!

Beef Short Rib Braised in Red Wine

Serves 4-6


For Brine

1 tablespoon pink peppercorns

2 bay leaves

1 cup light brown sugar

1 cup coarse sea salt

6 cups water


For Braise

4 tablespoons olive oil

3 pounds beef short ribs

¼ cup all-purpose flour

1 teaspoon fine sea salt

1/2 teaspoon fresh ground black pepper

2 cups leeks, chopped in rings using the white and light green parts only

1 cup fennel, chopped ( remove fronds, stem and core) 

1 tablespoon chopped garlic

1/2 teaspoon red pepper flakes

1 tablespoon light brown sugar

2 teaspoons fennel seeds

1 tablespoon minced fresh rosemary

1 teaspoon fresh thyme leaves

2 bay leaves

2 tablespoons tomato paste

2 cups beef stock

1 bottle dry red wine

1 tablespoon red wine vinegar

1 teaspoon sea salt

¼ teaspoon fresh ground black pepper


Directions

In a large stock pot add the ingredients for the brine and bring to a boil, dissolving the sugar and salt. Cool completely then add the beef short ribs , cover and refrigerate for 3 to 4 hours. Remove from the refrigerator and remove meat from the brine pat dry and let come to room temperature , before proceeding with making the braise. Mix flour, salt, pepper and paprika in a sealed plastic bag. Add beef  short ribs into the bag and coat with the flour mixture. In a large Dutch oven heat 2 tablespoons olive oil. Sauté the floured beef short ribs until browned. Remove browned meat into a bowl and place to the side. Add remaining olive oil to a pan and sauté the leeks and fennel until both start to soften. Add garlic and red pepper flakes and saute a minute . Add the fennel seeds, rosemary, thyme, and bay leaves. Sauté until fragrant about one minute. Add the tomatoe paste. Deglaze with the wine and stock . Add light brown sugar , salt and pepper and then add the meat. Bring to a boil, then lower heat , cover and simmer until very tender but meat still on the bone, approximately 3 hours. Skim any fat from the sauce and then  add one tablespoon red wine vinegar and simmer another ten minutes. Remove from heat and serve with soft polenta or mashed potatoes.

Champagne Cookies

I was looking to make something special for New Year’s Eve and decided to adapt my German Wine Cookie recipe by using champagne in place of the wine. I cut the cookies into the shape of champagne corks and decorated them with a little edible glitz. I love the result and you will too! The recipe is super simple, so give it a try,

Ingredients For Cookies
1/2 cup unsalted butter
1 cup fine granulated sugar
2 eggs
1 teaspoon vanilla
1/4 cup dry champagne
2 1/2 to 2 3/4 cups  all-purpose flour

Ingredients For  Icing

1 cup confectioner’s sugar
2 1/2 tablespoons whole milk
1 tablespoon fresh lemon juice
plus sprinkles or decorative sugar 

Directions
Preheat oven to 375 degrees F. Cream butter and sugar together until light and fluffy. Beat in eggs, vanilla and champagne. Add 2 1/2 cups flour and mix well. Dough will be stiff. If not sprinkle a little more flour in and mix well. Roll out dough, on well-floured pastry sheet, to a 1/4 inch thickness. Cut into desired shapes with cookie cutter.  I prefer to use a champagne cork cookie cutter. Bake on a non-stick cookie sheet for 10 minute, until bottoms just start to brown. Once cookies have cooled, make icing by combining above ingredients. Frost cookies and  top with decorative sugar and or sprinkles, Let icing harden on cookies by sitting on a wire rack. Store in an airtight container.

Red Wine Braised Pork and Chestnut Stew

At this time of year, I find joy in putting some great ingredients together and letting them braise slowly in the oven. This is inspired by a dish I had once in a London restaurant. When I returned from my trip, I worked on recreating my meal. Over the years I have tweaked the ingredients. I believe this version is actually better than the original! I attribute it to the final ingredient added in this last version the juniper berries, it adds a nice herbal under note to the favor of the stew. On the next cold wintry night fill your kitchen with the warmth and fragrance of this delicate stew.

Red Wine Braised Pork and Chestnut Stew

Serves 4-6


2 ½ lbs cubed pork loin

¼ cup flour

1 teaspoon kosher salt

½ teaspoon ground black pepper

2 tablespoons olive oil

2 tablespoons unsalted butter

2 cloves garlic, chopped

1 bottle red wine

2 bay leaves

4 juniper berries

1 tablespoon fresh sage, chopped

15 oz whole roasted chestnuts from jar


Directions


Preheat oven to 350F. Mix flour together flour with salt and pepper in bowl. Add pork cubes and coat well. In dutch oven heat both oil and butter, sauté pork cubes until browned on all sides. Add garlic and sauté another minute. Next add the red wine, bay leaves, juniper berries, sage and chestnuts. Bring to a boil, then turn off flame. Cover and place into the oven for 2 ½ hours, stirring occasionally. Serve with noodles, rice or steamed spinach.

 

 
 

Chardonnay Herb Gravy

When I first started making Thanksgiving for my family – one of my biggest challenges was getting that gravy perfect! My early apartments in Queens and Manhattan were all small. I struggled cooking in my typical long narrow galley kitchen. Anything I could prepare in advance helped. Over the years , as I continued to experiment with my gravy recipe, I came up with this foolproof recipe. It can be made in advance , which is always my goal so that I can enjoy the holiday along with my guests. This gravy is the perfect compliment to my Roasted Honey Herb Turkey.

Gravy Base

6 cups chicken stock

Giblets and neck from turkey

1 bouquet garni

1 onion, peeled and quartered

1 celery stick, chopped

1 teaspoon black peppercorns

Gravy

1 1/3 cup chardonnay

6 tablespoons flour

6 cups gravy base

4 tablespoons butter

2 bay leaves

2 tablespoons honey

1 tablespoons fine grey sea salt

1 teaspoon ground black pepper

½ cup chop parsley

Directions for gravy base

Combine into a soup pot chicken stock, bouquet garni, onion, celery, peppercorns, giblets and neck from turkey. Bring to a boil, lower heat and simmer for 1 hour. Cool and strain broth and keep refrigerated until ready to make gravy. This can be done one day in advance.

Directions for gravy

Place seasoned broth into a saucepan. Bring to a simmer. Melt butter in a bowl and then add flour , whisk until it is a smooth paste. Take one cup of hot broth and whisk into flour mixture until smooth. Pour this back into the broth and whisk to blend. Add bay leaves, honey, salt and pepper and whisk again. You can have this prepared as the turkey is roasting. Once the turkey is done and removed from the roasting pan pour pan juices into a measuring cup. Spoon off fat and discard. Add remaining juices into broth in the saucepan. Place roasting pan back on heat and deglaze with the chardonnay. Scrap pan to get all brown bits, let reduce to half , about 2 minutes. Add to the gravy. Whisk together and let simmer until reduced to a sauce consistency. Remove bay leaves, mix in parsley adjust seasoning with salt and pepper. Serve with turkey. 

 

 

Blueberry Merlot Sauce with Vanilla Gelato

Blueberry Merlot Sauce with Vanilla Gelato


2 cups fresh blueberries

1 cup Merlot 

½ cup light brown sugar

1 tablespoon cornstarch

½ teaspoon vanilla


Directions


Combine all ingredients in a medium sauce pan. Simmer for 20 minutes stirring occasionally. Cool and place in a container. Keep in refrigerator until ready to use. 

Serve as a topping to vanilla  gelato. 

Marinated Pork Chops with Fresh Plum Sauce

On my grandparents farm on Long Island, they had a full orchard of fruits trees. I would help my grandfather with tending the orchard from pruning to netting the trees to hanging little wooden snakes to scare off the birds. One of our favorite crops were the italian plums. We would gather the plums and my grandmother would made her close friend Mitzi’s plum cake. This recipe is a wonderful yellow cake that envelopes the plums. It’s easy to make and delicious to eat. We would just feast on those tiny jewel like fruit! I’m also including one of my favorite barbecued pork chops recipes served with a wonderful plum sauce. Hope you enjoy this food as much as we all do here by the bay!

Marinated Pork Chops with Fresh Plum Sauce

Serves 4

4 boneless ¾ inch think center cut pork chops

Marinade

¼ cup honey

¼ cup olive oil

2 tablespoons balsamic vinegar

2 garlic cloves

1 tablespoon fresh thyme leaves

Directions

Place pork chops and all marinade ingredients into a sealed plastic bag and mix well. Place in refrigerator for a minimum of 4 hours up to overnight. Remove from marinade and grill pork chops on a hot grill for approximately 8 minutes per side to be well done.

Fresh Plum and Merlot Sauce

1 tablespoon olive oil

2 tablespoons shallots, chopped

6 Italian plums, stoned and chopped

2 tablespoons honey

½ cup merlot wine

1 tablespoon balsamic vinegar

½ teaspoon ground ginger

Directions

In a large sauté pan, heat olive oil and add shallots, sauté for 2 minutes until soft. Add the plums and simmer for 15 minutes, add honey, wine,  balsamic vinegar and ground ginger and continue to simmer until the liquid is reduced in ½ and thickened. Keep warm until ready to serve.

Serve warm fresh plum sauce on top of the grilled pork chops.

Port Soaked Cherries, Blue Cheese and Pistachio Dip

Here is a perfect holiday cheese dip for New Year’s Eve or any festive party. This delicious dip starts with uses fresh cherries soaked in a port wine reduction and then added to a creamy cheese base with the flavor really kicked up by adding some crumbled blue cheese. As if these flavors weren’t enough the dip gets some nice crunch to it’s texture by adding chopped pistachios. This dip has beautiful color – reds and greens mixed together. Serve with some crusty bread or potato chips on the side and enjoy!

Port Soaked Cherries, Blue Cheese and Pistachio Dip
 
Ingredients
1/2 cup port wine
1/4 cup fresh chopped cherries, pitted
1/4 cup roasted and salted pistachio nuts, chopped
4 ounces cream cheese, softened
4 ounces blue cheese, crumbled
1/2 cup good quality mayonnaise
1/4 cup sour cream
2 tablespoons heavy cream
1 teaspoon apple cider vinegar
1 teaspoon worcestershire sauce
1/2 teaspoon dijon mustard
1 teaspoon fine sea salt
1/2 teaspoon fresh ground black pepper
1/8 teaspoon cayenne pepper
optional: extra chopped pistachios for garnish
Directions
In a small saucepan add port and bring to a simmer. Simmer for about 10 minutes thickening the liquid and reducing to half. Add the cherries and set aside for an hour. In a food processor add all ingredients except the port, cherries and pistachios. Blend well. Remove from processor and place in a bowl. Strain the cherries from the port and add to the dip along with the chopped pistachios. Fold well to combine all ingredients. Store in the refrigerator until ready to use in an air tight container. Allow to come to room temperature before serving. Sprinkle some chopped pistachios to garnish.

Merlot Turkey Gravy

Here is the prefect gravy recipe. It’s base is an enhanced chicken stock, which has the flavor punched up with merlot wine and turkey pan drippings. The result is so delicious that you will have a hard time not putting this on top of everything on your Thanksgiving plate. Remember gravy is imperative to a successful Thanksgiving meal! Hot gravy can make up for any missteps in timing with your meal, where a dish might have gotten cold.

2 tablespoons pomegranate molasses

1 tablespoons fine grey sea salt

1 teaspoon ground black pepper

Directions for gravy base

Combine into a soup pot chicken stock, rosemary, thyme, onion, celery, peppercorns, giblets and neck from turkey. Bring to a boil, lower heat and simmer for 1 hour. Cool and strain broth and keep refrigerated until ready to make gravy. This can be done one day in advance.
